- Heat 1 tablespoon of the olive oil in a small skillet. Once hot, add the diced stems and 1 garlic clove. Sauté 5 minutes.

- Turn off the heat. Add Boursin cheese and parmesan. Stir until smooth and well combined.

- Using a spoon, fill each mushroom cap with the cheese mixture, packing it in slightly.

- To a small skillet, add the remaining olive oil over medium-low heat. Add panko breadcrumbs and the remaining garlic. Cook until lightly toasted. Sprinkle the breadcrumb mixture on top of the mushrooms.

- Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly.
- Garnish with parsley and a sprinkle of salt and black pepper, if desired.
