How to Make Boursin Stuffed Mushrooms

  1. Preheat oven to 400°F. Grease or line with parchment paper a sheet pan or baking dish.
  2. Clean the mushrooms with a damp cloth and remove the stems. Set the mushroom caps on the prepared pan. Chop the stems finely.

  1. Heat 1 tablespoon of the olive oil in a small skillet. Once hot, add the diced stems and 1 garlic clove. Sauté 5 minutes.

  1. Turn off the heat. Add Boursin cheese and parmesan. Stir until smooth and well combined.

  1. Using a spoon, fill each mushroom cap with the cheese mixture, packing it in slightly.

  1. To a small skillet, add the remaining olive oil over medium-low heat. Add panko breadcrumbs and the remaining garlic. Cook until lightly toasted. Sprinkle the breadcrumb mixture on top of the mushrooms.

  1. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown and bubbly. 
  2. Garnish with parsley and a sprinkle of salt and black pepper, if desired.
