What to Serve with this Savory Croissant Breakfast Casserole

Ladling gravy on top of a slice is a chef’s kiss to this dish! Here’s how to make it:

  • Start with a 1/4 cup grease (butter or bacon grease preferably). Whisk 1/4 cup flour into the grease, and cook for 2-3 minutes. Add 1 cup of the milk and whisk quickly. This initial mixture will thicken and cook quickly. Add an additional cup of milk and stir until well combined. Allow the mixture to come to a light simmer then turn heat to medium-low. As the mixture thickens, add ½ cup milk and seasoning salt or salt and black pepper to taste. Simmer 3-5 minutes.

It also pairs wonderfully with a side of fresh berries, mixed fruit, a simple green salad, or something sweet like cinnamon rolls or muffins. For drinks, try orange juice, coffee, or mimosas for brunch!

Expert Tips and Substitutions

  • Use day-old croissants. Slightly stale ones soak up the custard better.
  • Swap the cheddar cheese. Try Monterey Jack, Swiss, Gruyere, or mozzarella.
  • Make it veggie-only. Skip the sausage and add sautéed mushrooms, spinach, or peppers.
  • Want a lighter version? Use turkey sausage and reduced-fat cheese.
  • For extra flavor. Add a pinch of crushed red pepper or a splash of hot sauce to the egg mixture.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days. Warm individual portions in the microwave for 30–45 seconds or in the oven at 325°F until heated through.

You can freeze individual slices for up to 2 months. Thaw overnight in the fridge before reheating.

Frequently Asked Questions

Can I bake it right away instead of chilling?

Yes! Chilling helps the croissants absorb more of the egg mixture, but if you’re short on time, it still bakes up beautifully right away.

Can I prepare and freeze this croissant breakfast casserole before baking?

Yes! Assemble the casserole completely (without baking), wrap it tightly in plastic wrap and foil, and freeze for up to 2 months. When ready to bake, thaw in the fridge overnight and bake as directed.

How do I know when the casserole is fully cooked?

The center should be set (not jiggly), and a knife inserted in the middle should come out with a few moist crumbs. The top should be golden brown and slightly crisp.
