We love a breakfast casserole, why? Because they’re easy to assemble and are always so delicious. This Amish Breakfast Casserole is one of our family’s favorite morning meals with layers of hash browns, sausage, egg, and melty cheese.

  • Large eggs: Binds everything together and adds classic breakfast flavor.
  • Sliced green onions: Gives that light onion flavor and pop of color.
  • Shredded cheddar cheese: Nothing is better than cheddar cheese with breakfast foods.
  • Whole cottage cheese: Adds a creaminess to each bite as well as a boost of extra protein.
  • Shredded Swiss cheese: Meltiness with a mild cheese flavor that pairs with the cheddar so well.
  • Frozen hash brown potatoes: Shredded potatoes are the foundation of this casserole and they’re so delicious.

How to Make Amish Breakfast Casserole

  1. Preheat oven to 350°F. Grease a 13×9-inch baking dish with nonstick spray or butter.
  2. In a large skillet over medium heat, cook breakfast sausage or bacon until browned and fully cooked. If using sausage, crumble it as it cooks. Once cooked, drain excess grease and set aside. If using bacon, crumble after cooked.

  1. In a large bowl, whisk eggs until well blended.
  2. Add green onions, cheddar cheese, cottage cheese, Swiss cheese, salt, pepper, and the cooked breakfast meat. Mix again until well combined.

  1. Fold the thawed hash brown potatoes into the mixture.
