- Place a large cast iron skillet over medium-high heat. Add olive oil and 1 tablespoon butter, and heat until shimmering.
- Don’t overcrowd the pan. Work in batches if needed. Add the beef cubes to the skillet in a single layer. Sear 30-90 seconds, turning once, until deeply browned and to preferred doneness. Remove to a plate.

- Reduce heat to medium. Add the remaining butter, smashed garlic cloves, and rosemary sprigs to the skillet. Stir and spoon the butter around the pan for 1–2 minutes, until fragrant and lightly golden.

- Return the beef tips and any juices to the skillet. Toss gently to coat in the rosemary-garlic butter for 30–60 seconds.
