    Sunrise Tater Tot Casserole

    This delicious one-skillet casserole is the perfect way to start the day! Loaded with breakfast favorites like sausage, cheese, eggs, tots, and veggies, it's a breakfast show-stopper!

    This casserole is layered with breakfast sausage, veggies, cheese, tater tots and studded with beautiful Pure Flavor® Bumbles® Yellow Grape Tomatoes. These tomatoes are available year round and are an excellent source of vitamins A and C. They're delightfully sweet and savory and amazing in so many recipes or as a snack.

    What You'll Need

    • Breakfast Sausage
    • Bell Peppers
    • Green Onions
    • Pure Flavor® Bumbles® Yellow Grape Tomatoes
    • Cheddar Cheese
    • Eggs
    • Milk
    • Tater Tots

    Tools You'll Need

    • 12-inch Cast Iron Skillet or Large Oven-Safe Skillet
    • Meat Chopper
    • Whisk
    • Tomato Knife

    How to Make This Recipe

    1. While the oven is preheating to 350˚F, you'll prepare the casserole layers. First, crumble and cook the sausage in a cast iron skillet or other oven safe skillet until no longer pink. Blot any excess grease with a paper towel.
    1. Sauté the diced peppers and whites of the green onion with the sausage until tender. This should take about 3 minutes.
    1. Turn off the heat, and add ¾ of the tomatoes on top in an even layer followed by 1 ½ cups of the shredded cheese. 
    1. In a large bowl, whisk together eggs, milk, salt and pepper. Pour the mixture evenly into the skillet.
    1. Arrange the frozen tater tots over the egg mixture in concentric circles, starting with a row along the edge of the pan and working your way in.
    1. Bake 35-40 minutes or until the eggs have fully set and the cheese has melted. Sprinkle the remaining cheese on top and bake 5 more minutes. 
    2. Cool 5 minutes before serving to give time for the casserole to set. Garnish as you'd like.

    Tips and Substitutions

    • Besides regular pork sausage, this casserole can also be made with turkey breakfast sausage, smoked sausage, ground Italian sausage or a plant-based ground sausage.
    • You can substitute whole eggs with egg whites.
    • You can substitute the cheddar cheese with any of your favorite cheeses! Colby jack, pepper jack and Monterey jack are some of our other favorites with this casserole.
    • The tater tots should be frozen when baked to avoid overcooking.
    • Garnish options for this casserole include (but not limited to):

      • Hot Sauce
      • Sliced Green Onions
      • Ketchup
      • Crumbled Cooked Sausage or Bacon

    Storage

    • Once cooked then completely cooled, this casserole can be stored in an air-tight container in the refrigerator up to 4 days.
    • Like many casseroles, this one can be frozen, thawed and reheated as well. After it's cooked and completely cooled, either store in an air-tight container or wrap securely with cling wrap followed by aluminum foil. Thaw overnight in the refrigerator before reheating. It can be frozen up to 2 months.

    Ingredients

    • 1 lb ground breakfast sausage
    • ½ cup diced bell peppers
    • 3 sliced green onions green and white sections divided
    • 1 pint halved Pure Flavor® Bumbles® Yellow Grape Tomatoes  divided
    • 2 cups shredded cheddar cheese divided
    • 8 large eggs
    • ½ cup milk
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 28 oz tater tots
    • Garnish options: halved tomatoes, thinly sliced chives, hot sauce

    Instructions

    • Preheat the oven to 350˚F. 
    • In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease. Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes. 
    • Turn off the heat, and add ¾ of the tomatoes on top in an even layer. Sprinkle 1 ½ cups of the shredded cheese on top. 
    • In a large mixing bowl, whisk together eggs, milk, salt and pepper. Pour evenly in the skillet. Arrange the frozen Tater Tots over the egg mixture in concentric circles, starting with a row along the edge of the pan and working your way in.
    • Bake 35-40 minutes or until the eggs have fully set and the cheese has melted. Sprinkle evenly on top the remaining cheese and bake 5 additional minutes. 
    • Cool 5 minutes prior to serving. Garnish with additional tomatoes, chives and hot sauce on the side.
