How to Make Breakfast Tater Tot Casserole
- Preheat oven to 350˚F.
- In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease by blotting with a paper towel.

- Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes.

- Turn off the heat, and add 3/4 of the tomatoes on top in an even layer. Sprinkle 1 1/2 cups of the shredded Borden® Cheese on top.

- In a large bowl, whisk together eggs, milk, salt and black pepper. Pour evenly in the skillet.

- Arrange the frozen Tater Tots over the egg mixture in a single layer in concentric circles, starting with a row along the edge of the pan and working your way in. Sprinkle evenly on top the remaining Borden® Cheese.

- Bake 35-40 minutes or until the eggs have fully set and the top is golden brown and crispy.
- Cool 5 minutes before serving to give time for the casserole to set. Garnish as you’d like.

Leftover tater tot breakfast casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. If you freeze it, it can last up to 2-3 months.
Like many casseroles, this one can be frozen, thawed, and reheated as well. After it’s cooked and completely cooled, either store it in an airtight container or wrap it securely with cling wrap followed by aluminum foil. Thaw overnight in the refrigerator before reheating. It can be frozen for up to 2 months.
