How to Make Breakfast Tater Tot Casserole

  1. Preheat oven to 350˚F. 
  2. In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease by blotting with a paper towel.

  1. Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes.

  1. Turn off the heat, and add 3/4 of the tomatoes on top in an even layer. Sprinkle 1 1/2 cups of the shredded Borden® Cheese on top.

  1. In a large bowl, whisk together eggs, milk, salt and black pepper. Pour evenly in the skillet.

  1. Arrange the frozen Tater Tots over the egg mixture in a single layer in concentric circles, starting with a row along the edge of the pan and working your way in. Sprinkle evenly on top the remaining Borden® Cheese.

  1. Bake 35-40 minutes or until the eggs have fully set and the top is golden brown and crispy.
  2. Cool 5 minutes before serving to give time for the casserole to set. Garnish as you’d like.
