    Perfect Guacamole

    This guacamole is creamy, fresh and irresistibly delicious! It's perfect added on top of your favorite Mexican-inspired dishes, on a tortilla chip or just eaten from a spoon!

    This is a picture of green guacamole and chips. The guacamole has in it some red fire roasted tomatoes and cilantro as well as lime and seasonings.

    I've had many a guacamole, but this recipe is stand-apart delicious! In 2018, my family and I visited a restaurant along the Riverwalk in San Antonio, Texas called Boudros. On their menu, they serve a "Guacamole for Two" that they prepare table side. As I watched them make it, I took mental note of every step. With just one bite, the guacamole game was changed.

    Since I can't just visit Boudros any time I crave their guacamole gold, I felt it necessary that I do my best to recreate it! While I don't have their "exact" recipe, mine came pretty close. There are 2 things unique about this guacamole that makes it stand apart: fire roasted tomatoes and fresh orange juice. The level of flavor these give the guacamole will stop you in your tracks. They add an amazing acidity as well as a perfectly balanced sweetness.

    Like any delicious guacamole recipe, this guacamole is incredible served with tortilla chips and dolloped on top of so many Mexican-inspired dishes. I originally shared this recipes in 2020, and to this day, I still get messages that this is the best guacamole they've ever had. If you're a guacamole fan, hold your britches. It just got even better!

    My niece Lauren Kennedy makes this often and asked that me make it together on her last visit from Kentucky.

    How to Make This Recipe

    1. Cut the avocados in half lengthwise, remove the pit, and scoop out the flesh into a mixing bowl. Add the diced red onion, cilantro, fire-roasted tomatoes, lime juice, orange juice and salt.
    1. Using a sharp knife, pastry cutter or meat chopper, pierce and mash the avocado with the other ingredients until the avocado is in bite-sized pieces. Fold with a spatula to ensure all of the ingredients are incorporated well. 
    1. Taste the guacamole and adjust the seasoning as needed, adding more salt or lime juice to taste.
    2. Serve the guacamole immediately, or cover and refrigerate until ready to serve.

    Tips and Substitutions

    • Other yummy ingredients that can be added to this guacamole are:
      • Fresh Garlic
      • Lemon Juice
      • Chopped Chipotle Peppers in Adobo Sauce
      • Fire Roasted Green Chili Peppers
      • Drained Diced Green Chilis
      • Other Varieties of Onions: Yellow, Sweet, Vidalia
      • Hotter Pepper Varieties: Serrano, Poblano, Habanero
      • Drained and Chopped Mango or Pineapple
    • Getting the avocado to lime ratio correct is essential. I provided a range of lime in the recipe because the size of avocados and their flesh/seed ratio can differ. Once the ingredients are blended, taste and determine if you'd like to add more lime.

    Frequently Asked Questions

    • How do I choose the perfect avocados?
      • A perfect avocado should still have the stem, and when given a gentle squeeze, it should have a slight give. If it mashes in easily, it's too ripe and can be stringy and bruised inside. If there's zero give, then it's not ripe enough.
    • What if all of the avocados are hard in my store?
      • You can ripen avocados by placing them in a brown paper bag with bananas. The ethylene gas released by the bananas speeds up the ripening process. You'll still need to wait overnight or 1-2 days.
    • What if I prefer a smoother texture?
      • You can blend the mixture to your desired guacamole consistency by mashed it longer and folding together the ingredients.
    • I don't like tomatoes. Do I have to include them?
      • Absolutely not! If you don't like them, skip them completely.
    • Can I use fresh fire-roasted tomatoes instead of from a can?
      • Absolutely! They'll yield pretty much the same flavor.
    • Is there a difference in traditional Mexican guacamole and American guacamole?
      • Mexican guacamole is mostly made with only fresh ingredients: avocados, garlic, onion, cilantro, tomatoes, lime and salt. Some American blends add sour cream, mayonnaise, hot sauces and different seasonings.
    • Can I use jarred lime juice instead of fresh?
      • It's best to use fresh lime juice in guacamole whenever possible. Fresh lime juice has a brighter and more vibrant flavor than jarred lime juice, which may have added preservatives or a slightly different taste due to processing.
    • Is guacamole healthy?
      • When eaten in moderation and paired with healthy foods, it can be a healthy and nutritious food choice. Avocados are a good source of healthy monounsaturated and polyunsaturated fats that can help lower cholesterol levels and reduce the risk of heart disease.
    • Why does guacamole turn brown in the refrigerator?
      • It turns brown due to oxidation. When avocados are cut or mashed, an enzyme called polyphenol oxidase is released, which causes the avocado flesh to react with oxygen in the air and turns the surface of the avocado flesh brown.
    • How long does guacamole last?
      • It generally keeps optimal freshness and flavor for 1-2 days. To help extend its shelf life, you can either add additional lime or follow the storage instructions below using plastic wrap.

    Storage

    • There a couple methods of storing guacamole that can be effective in keeping its freshness and flavor. In both ways, first transfer leftover guacamole to a container and spread in an even layer, ensuring any air pockets are removed.
      • Water Method: Add a thin layer of water on top then seal the container tightly. When ready to eat, pour off the water and give it a stir. It might have a slightly different texture, but the flavor should be unaffected.
      • Plastic Wrap Method: Add a layer of plastic wrap to the top and ensure the entire surface is touching the plastic wrap. Cover tightly with a lid and store in the refrigerator.
    • Both the water and plastic wrap storage methods yield an optimal refrigeration storage time of 1-2 days.
    • Due to the sensitivity of oxidation of the avocados, it is not ideal to freeze and thaw guacamole for consumption.

    Ingredients

    • 2 large avocados seed and skin removed
    • ½ orange juiced
    • 1-1 ½ limes juiced
    • ⅓ cup red onion finely diced
    • ⅓ cup cilantro chopped
    • ⅓ cup canned diced fire-roasted tomatoes slightly drained

    Instructions

    • In a medium bowl, combine all ingredients.

    • Taste and add additional seasonings and heat to your liking. Refrigerate until ready to serve.
