  • 2 ounces white chocolate bar or chips melted
  • 1/4 cup finely chopped sweetened shredded coconut
  • 1 cup full-fat coconut milk
  • 1 cup white cranberry juice or a white cranberry flavor of choice
  • 3 tablespoons cream of coconut
  • 3 tablespoons coconut cream
  • Topping Options: sugared cranberries (see note), pomegranate arils, fresh rosemary, fresh mint, pineapple wedge, chopped strawberries

Instructions

  • Working with 1 glass at a time, dip the rim of 4 cocktail glasses into the melted white chocolate. Immediately dip into shredded coconut. Let set for 5–10 minutes.
  • Fill a large shaker with 1/4 cup ice. Add coconut milk, white cranberry juice, cream of coconut, and coconut cream. Shake well until chilled and slightly thick.
  • Strain into the prepared rimmed glasses over crushed ice.
