- 2 ounces white chocolate bar or chips melted
- 1/4 cup finely chopped sweetened shredded coconut
- 1 cup full-fat coconut milk
- 1 cup white cranberry juice or a white cranberry flavor of choice
- 3 tablespoons cream of coconut
- 3 tablespoons coconut cream
- Topping Options: sugared cranberries (see note), pomegranate arils, fresh rosemary, fresh mint, pineapple wedge, chopped strawberries
Working with 1 glass at a time, dip the rim of 4 cocktail glasses into the melted white chocolate. Immediately dip into shredded coconut. Let set for 5–10 minutes.
Fill a large shaker with 1/4 cup ice. Add coconut milk, white cranberry juice, cream of coconut, and coconut cream. Shake well until chilled and slightly thick.
Strain into the prepared rimmed glasses over crushed ice.
Garnish as desired.

Store leftovers in a pitcher with a lid, or in an airtight container in the fridge — just be sure to remove any ice to prevent dilution. This will keep for 2-3 days. When ready to serve again, give it a stir to refresh, and pour over fresh ice.

Tips:
- Chill ingredients beforehand. This will give the drink the best overall flavor and make it extra refreshing.
- Use full-fat coconut milk. For the creamiest texture. "Light" just won't do the trick.
- Don’t skip the garnishes. Fresh fruit and herbs make the drink extra colorful for presentation. They're delicious final touches, too!
- Serve immediately after mixing. For the best creamy, refreshing texture.
- Blend for a frozen variation. Make an extra indulgent version by blending with ice.
- Use crushed ice for a cocktail-style feel. Pour the drink over crushed or pebble/nugget ice to give it a fancy at-home cocktail vibe.
- Add alcohol if desired. Make it an adult, alcoholic beverage by adding your favorite rum or vodka.

- You'll need 1 cup fresh cranberries, 1/2 cup sugar, 1/2 cup water, and extra sugar for dusting. In a small saucepan, bring sugar and water to a simmer until sugar dissolves. Remove from the heat and stir in cranberries. Soak 10 minutes. Remove with a slotted spoon and place on paper towels. Allow them to dry 1 hour. Roll the soaked and dried cranberries in sugar. Let dry another 30 minutes until sparkly.
