French Onion Chicken & Rice

No Peek Chicken is a super popular dish in the Dinner in 3, 2, 1 family! This variation is another delicious way to blend chicken, rice and rich, savory flavors in one pan. You can cut back on the rice as well if you’d like.

Ingredients

  • 1 1/2 cups long grain rice (you can reduce the rice to 1 cup if desired)
  • 10.5oz can Campbells French Onion soup
  • 14.5oz can beef broth
  • 1/4 cup butter, cut into slices
  • 2-2 1/2lb boneless, skinless chicken breasts or thighs
  • 1oz packet Lipton Onion Soup Mix

    Preheat the oven to 350°F. To a 13”x9” baking dish, whisk together rice, French onion soup and broth. Disperse butter on top followed by the chicken. Sprinkle the onion soup mix on top, cover tightly with foil and bake 1 hour 30 minutes.

    Approximate Nutrition Information per 1 serving (dish serves 8): 346 calories, 15.5g fat, 32g carbs, 19.5g protein

    This was a complete success! My family of 5 gobbled it up. Highly recommend!
    We used thin sliced chicken breast and it was perfect. Served with a side of green beans. Thanks for sharing!

    We have now made this recipe 3 times and my husband and I love it! We hardly ever agree on recipes and which ones will go on repeat, but this one, there is no question. It makes enough for dinner and we can both pack some for our lunches.

    Followed your recipe exactly the rice did not cook. Flavor is really good but the rice did not absorb any of the liquid at all and stayed the same size???
