Hi Joe! Thank you for making this dish! I’m not sure why it didn’t absorb the liquid. I’ve never had that feedback about the rice. As long as it’s long-grain rinsed rice and baked at the right temperature securely covered., it should work. I’ve had feeback that unrinsed worked as well as minute rice. If there was a gap in the foil and air escaped, then that could cause the rice not to cook all the way. I hope you give it another try. I have an updated recipe called Next Level French Onion Chicken that adds more deliciousness to it! Happy New Year!

We have now made this recipe 3 times and my husband and I love it! We hardly ever agree on recipes and which ones will go on repeat, but this one, there is no question. It makes enough for dinner and we can both pack some for our lunches.

Followed your recipe exactly the rice did not cook. Flavor is really good but the rice did not absorb any of the liquid at all and stayed the same size???
