Easy Chicken Casserole

This casserole has minimal ingredients and super quick to make. The dough has a similar texture to dumplings.

Ingredients
 

  • 4 cups shredded and seasoned cooked chicken or turkey
  • 1/4 cup butter melted
  • 1 cup self-rising flour
  • 1 cup milk
  • 14.5 oz can chicken broth
  • 10.5 oz can condensed cream of chicken

Instructions

  • Preheat oven to 400ºF.
  • Pour butter in a 13”x9” baking dish. Spread in the chicken in an even layer on top. In a medium bowl, whisk together the milk and the flour. Pour in an even stream over the chicken. In that same bowl, whisk together chicken broth and cream of chicken soup. Pour evenly on top of the chicken and flour mixture and DO NOT stir. 
  • Bake uncovered for 35-40 minutes, or until the dough is golden brown.

    Dinner 321, I made this casserole and is was amazing!!!! There were four of us and ate almost all of it! We all
    loved it! I have a question though, does this reheat well????? We had a small amount left and I gave to my mom to take home for next day and she said the “top became hard” when she reheated in microwave. ( I’m assuming that’s the flour part) Have you had experience with reheating???

    1. That’s WONDERFUL, Susan! I’m so happy you made it and liked it so much! My husband has been the only one to eat the leftovers and he said they were really yummy. I’m thinking if there’s not enough of the liquid or “gravy” with the flour mixture part in the leftover dish, it might become too dry.
