    Whole Roasted Honey Carrots

    Sweet, savory and delicious, these carrots might become one of your new favorite side dishes!

    Ingredients

    • ½-1 lb whole carrots peeled and cleaned
    • Pure olive oil spray
    • Salt/Black Pepper
    • 2-3 tablespoon honey or hot honey

    Instructions

    • Preheat oven to 425°F. 
    • Spray a medium sheet pan with olive oil. Arrange the whole prepared carrots on the sheet pan in one layer. Spritz with olive oil and sprinkle with ½ teaspoon each salt and pepper. 
    • Bake 25 minutes. 
    • Remove from the oven and carefully slice each carrot most of the way through, leaving it intact. Sprinkle with ¼ teaspoon salt and hot honey. Flip the carrots over cut-side down on the sheet pan, return to the oven, and bake an additional 25-30 minutes or to desired caramelization.
