After living in Texas for more than 10 years, we know what good Mexican and Tex-Mex cuisine is. We love great chicken fajitas, but find they are very time consuming to make. So we solved that problem by creating our Chicken Fajita Casserole that has become one of our family’s most requested recipes.

  • Cooked chicken: We love to use ready-cooked fajita chicken or rotisserie chicken as a shortcut for this. You can also roast or poach chicken from scratch too.
  • Knorr Fajita Rice: There’s delicious seasoning already in this rice which makes the casserole extra flavorful.
  • Low-sodium condensed cream of chicken soup: Adds the creaminess and rich chicken flavor to the casserole.
  • Sour cream: Another key ingredient to a creamy bite every time.
  • Rotel (diced tomatoes and chiles): This can be found in the canned foods section. It’s one of our favorite ingredients to add lots of bold flavor.
  • Diced bell pepper: Gives vegetable crunch and also a signature fajita ingredient.
  • Diced onion: Another classic fajita ingredient that adds great base flavor.
  • Chicken broth: The liquid that helps to cook everything perfectly.
  • Fajita seasoning or taco seasoning: Buy your favorite brand here, these seasonings usually have chili powder, garlic powder, onion powder, cumin, and oregano.
  • Shredded Mexican cheese blend: We can’t forget the cheese! We love the classic Mexican blend.
  • Garnish options: Sliced green onions or cilantro are both great choices.

How to Make Chicken Fajita Casserole

  1. Preheat the oven to 350°F. Grease a 13×9-inch baking dish with nonstick cooking spray or butter.
  2. To a large bowl, whisk together sour cream, cream of chicken soup, and chicken broth.

  1. Add Rotel, fajita rice, fajita seasoning, 1 cup of the cheese, bell pepper, and onion. Mix until combined.

  1. Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheese on top.

  1. Cover tightly with foil. Bake 30 minutes. Uncover and bake another 15-20 minutes, or until the cheese has melted and the rice is tender.

Expert Tips

  • Use ready-to-use fajita chicken, rotisserie chicken or leftover chicken for ease. To cut down on the prep time, these are our three best tips for making shredded chicken fast! We often love to cook a big batch of chicken breasts on a Sunday and then make this casserole quickly during the week for a simple dinner.
  • Rice cup alternatives. If your store doesn’t have Knorr Fajita Rice Cups, you can use 1 package of Knorr Rice Sides (5.4-5.6oz bag varieties) in place of them. Their cilantro lime, taco, Mexican or Spanish flavors would all work great!
  • Swap the protein. This fajita bake would also be delicious with cooked ground chicken or turkey as well as shredded beef.
  • Make it spicy. You can add a pinch of cayenne pepper or red chili flakes into the seasoning if you like it spicy. Additionally, adding some shredded pepper Jack cheese also adds a bit more heat.
  • If you want to make your own condensed soup, combine 3 tablespoons butter in a saucepan over medium heat. Whisk in ⅓ cup all-purpose flour and cook for 1 minute. Whisk in ⅓ cup milk and ⅓ cup chicken broth until well combined. Season with ¼ teaspoon onion powder and salt and pepper to taste. Stir and cook for 1-2 minutes or until thickened and creamy. You could also make our cream of mushroom soup recipe that’s homemade. Just leave out the mushrooms!

Storage

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave for a few minutes until cooked through.

Freezing this chicken fajita casserole also works well too. It will freeze well for up to 2 months. Just thaw in the fridge overnight before reheating.

Yes, you can make the chicken mixture with peppers to then fill the tortilla shells with.

What are other ingredients I can use in chicken fajita casserole?

We love to change the protein by using shredded beef, ground beef, ground chicken, or ground turkey. You can also add beans, corn, and other spices like cayenne or red chili flakes to make it spicy.

Can I make chicken fajita casserole in advance?

You can bake it up to an hour before having guests over, but we don’t recommend assembling it in advance.
