- 1 cup sour cream
- 10.5 ounce can low-sodium condensed cream of chicken soup
- 14.5 ounce can chicken broth
- 10 ounce can Rotel (diced tomatoes and chiles) undrained
- 2 2.6 ounce Knorr Fajita Rice cups (uncooked) see note for substitutes
- 8 ounces shredded Mexican cheese blend
- 3 tablespoons fajita seasoning or taco seasoning
- 1 cup diced bell pepper
- 1/2 cup diced onion
- 4 cups shredded cooked chicken
- Garnish options: sliced green onions or green onions
Preheat the oven to 350°F. Grease a 13x9-inch baking dish with nonstick cooking spray or butter.
To a large bowl, whisk together sour cream, cream of chicken soup, and chicken broth.
Add Rotel, fajita rice cups, fajita seasoning, 1 cup of the cheese, bell pepper, and onion. Mix until combined.
Fold in the chicken.
Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheese on top.
Cover tightly with foil. Bake 30 minutes. Uncover and bake another 15-20 minutes, or until the cheese has melted and the rice is tender.
Storage:
Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave for a few minutes until cooked through.
Freezing this chicken fajita casserole also works well too. It will freeze well for up to 2 months, just thaw in the fridge overnight before reheating.
Tips:
- Use ready-to-use fajita chicken, rotisserie chicken or leftover chicken for ease. To cut down on the prep time, these are our three best tips for making shredded chicken fast! We often love to cook a big batch of chicken breasts on a Sunday and then make this casserole quickly during the week for a simple dinner.
- Rice cup alternatives. If your store doesn't have Knorr Fajita Rice Cups, you can use 1 package of Knorr Rice Sides (5.4-5.6oz bag varieties) in place of them. Their cilantro lime, taco, Mexican or Spanish flavors would all work great!
- Swap the protein. This fajita bake would also be delicious with cooked ground chicken or turkey as well as shredded beef.
- Make it spicy. You can add a pinch of cayenne pepper or red chili flakes into the seasoning if you like it spicy. Additionally, adding some shredded pepper Jack cheese also adds a bit more heat.
- If you want to make your own condensed soup, combine 3 tablespoons butter in a saucepan over medium heat. Whisk in ⅓ cup all-purpose flour and cook for 1 minute. Whisk in ⅓ cup milk and ⅓ cup chicken broth until well combined. Season with ¼ teaspoon onion powder and salt and pepper to taste. Stir and cook for 1-2 minutes or until thickened and creamy.
