    Laura's Tip: About 30 minutes before you plan to cook your chops, take them out of the refrigerator to come to room temperature. It allows for more even cooking throughout the meat.

    How to Make Smothered Pork Chops

    1. In a shallow bowl, whisk together flour, Cajun or seasoning salt and Italian seasoning. Dredge each side of the pork chops in the flour mixture, then set aside on a plate. Reserve the flour mixture.

    1. Heat oil in a large skillet over medium-high heat. Once hot, add the pork chops to the pan, and cook 2-3 minutes on each side. They'll be golden brown. Remove them to a plate. Work in two batches if needed.

    1. Add the onions and mushrooms to the skillet and cook for about 5 minutes, until the onions are translucent and vegetables slightly tender. Add garlic and cook an additional minute.
    2. Add 1 ½ tablespoon of the reserved flour mixture, stir and cook 1 minute.
    3. Carefully stir in broth and cream of mushroom soup until it’s a cohesive mix. Scrape and stir in any solid bits from the bottom of the pan. Allow the mixture to simmer on medium heat for 5 minutes.
    4. Taste and add additional seasonings if desired. Return the pork chops to the skillet, coating them on each side. Cover and simmer for 5-8 minutes on medium-low heat or until the pork chops reach an internal temperature of 145°F. Turn off the heat and rest 3 minutes.

    • Resting the Chops: Thickness of the pork chops can vary the time needed for cooking. The USDA recommends pork reach an internal temperature of 145°F then rest for 3 minutes. The combination of searing then simmering per the instructions should yield this internal temperature. You can use a meat thermometer to confirm.
    • Custom Flavor: Feel free to adjust the seasoning to your taste—add more spices like black pepper, crushed red pepper flakes or cayenne pepper for extra heat or omit them for a milder flavor. You can also add fresh herbs.

    • Chicken Broth: In lieu of broth, feel free to use a mixture of water and additional cream of mushroom soup for a richer sauce. Chicken stock can also be used. Heavy cream can make the sauce even more luscious.
    • Vegetables: Adding vegetables such as bell peppers, carrots, or even frozen peas can enhance the nutritional value and flavor of the dish. Just sauté them with the onions and mushrooms before adding the broth and cream of mushroom soup.
    • Cream of Mushroom Soup: Substitute with cream of chicken soup or cream of celery soup. You can also opt for a made from scratch version with my homemade cream of mushroom soup.

      True southern deliciousness! Tip for others wanting to make this: make sure to not overcook the pork and it will be tender and juicy. It's so worth the mess I made with the flour. Your recipes rock!

      I decided to make these for a good ole comfort meal! I couldn’t find thick cut boneless chops so I grabbed thin cut and carefully browned them and let them finish cooking in the gravy! This was a GREAT meal! I made a squash casserole and mashed potatoes! We will be keeping this on the meal rotation just like all Laura’s recipes!! 10/10 recommend!!
