Why You’ll Love this Recipe
- Better than store-bought shake and bake. This pork chop recipe is so easy to make, the whole family will want to help. In just 10 minutes of prep time (almost the same time as buying the mix from the store), you can have this version from scratch ready to bake in the oven.
- A family favorite 30 minute meal. The best part is that these pork chops feel like they took a lot of effort to make when they really only take 30 minutes!
- Serve them with any side dish. No matter the occasion, these shake and bake pork chops will be an asset to the menu.
Laura Ashley’s Tip: When purchasing pork chops, you can buy bone-in or boneless, but you want them to be about an inch thick. This will guarantee they are moist and juicy on the inside after baking.

- Panko bread crumbs: Adds the crunch in the coating.
- Bread crumbs: Gives a more fine texture to the breadcrumb mixture to complement the panko.
- Smoked paprika: Adds a nice hint of smokiness.
- Garlic powder: Infuses every bite with sweet garlic flavor.
- Flaky poultry seasoning or herbs de Provence: Two different seasoning blends that we love to use in the breadcrumb mixture.
- Celery seed: Adds a warm savory flavor to every bite.
- Neutral oil avocado, extra virgin olive oil, canola or vegetable oil: Used to lightly grease the breadcrumb topping so it turns crispy and beautifully golden brown in the oven.
- Thick cut center loin pork chops (bone-in or boneless): Any kind will do, just make sure your pork chops aren’t too thin. Bone-in will typically yield a more tender, flavorful result due to the extra marbling and the bone. Boneless won’t take as long to bake as bone-in.
- Optional Garnish: We love to add fresh parsley as a pop of fresh color!

Tools You’ll Need
How to make Shake and Bake Pork Chops
- Preheat oven to 425°F. Line a baking sheet with aluminum foil and situate a wire rack on top. Grease the wire rack with nonstick cooking spray or butter.
- To a large resealable bag, add both breadcrumbs and all of the seasonings. Seal and shake until well combined.

- Working on a cutting board, pat the pork chops dry with a paper towel. Brush both sides with your oil of choice.

- Working with one chop at a time, add to the bag of seasoning, shake until fully coated, then place on prepared wire rack. Discard the leftover coating.

- Bake 20-25 minutes. Check that the temperature has reached 143°F. If needed, add time in 3 minute increments.
- Remove from the oven and set the oven to broil. Spritz the tops of the pork chops with olive oil. Return the pan to the oven. Watching it carefully, broil for 1-2 minutes, or until they’re brown and crispy. Ensure the internal temperature has reached 145°F.

- Rest 3 minutes before serving. If desired, garnish with fresh snipped parsley.

Expert tips
- Be sure to add the wire baking rack to the baking sheet. This allows the pork chops to be cooked from all sides and to make sure that the shake and bake coating gets golden brown and crispy.
- Broiling at the end is optional but highly recommended. You will want to watch your pork chops very closely at this point, so they don’t burn! It should only take a minute or so for them to turn golden brown.
- You will know the pork chops are done when a meat thermometer registers 145ºF. This is the easiest way to know without slicing into the pork.
- Make sure you pat your pork chops very dry before shaking in the coating. This will help the coating to adhere better prior to baking.
- Boneless pork chops will take less time. The presence of the bone and extra marbling takes longer for bone-in, but it also yields a more tender, flavorful result.

Storage
Store any leftovers in an airtight container in the fridge for up to 4 days. When reheating, they may not be as crisp as when you originally made them. We recommend reheating them in a 350ºF oven until warmed through or adding them into the air fryer to help re-crisp the coating.
We don’t recommend freezing these shake and bake pork chops as it can compromise the texture of the outer breadcrumb coating.
FAQs
It depends on the thickness of the pork chop itself. If they are boneless and thinner then it will take less time than bone-in. Ours take about 22-25 minutes to bake or we know they’re finished when a meat thermometer reaches 145ºF.
Be sure to shake the pork chops well and even press on some of the breadcrumb coating to make sure it adhere well. You also want to bake them on a wire rack so they cook evenly on all sides and also make sure your oven is preheated to the correct temperature.
For our recipe, we recommend 425ºF. This will brown the breadcrumb coating nice and make it crispy, while keeping the pork meat in the center juicy.
