    This 8-ingredient Crockpot Chicken and Stuffing Casserole the is ultimate comfort food chicken dinner for any night of the week. Easy to prepare and full of homemade flavors, it's a recipe that's been loved in our family for several years.

    A slow cooker meal is always a favorite in our household. They are easy to prepare in the morning and always yield flavorful homemade recipes from scratch. This Crockpot Chicken and Stuffing Casserole is inspired by my Crockpot Chicken and Noodles recipe that is one of the most popular recipes on my site as well as has received over 1.5 million views on social media!

    This slow cooker recipe is so simple to make with fresh veggies, chicken breasts or thighs, cream of chicken and celery soup, as well as boxed stuffing mix! You can customize the recipe by adding in any of your favorite veggies. I've also added in shredded cheddar cheese too for another delicious take!

    • Chicken Thighs or Breasts: Be sure to buy boneless skinless here. You can mix and match the cut of meat or stick to one type based on preference.
    • Chopped Vegetables: Celery, onion and mushrooms are my pick. Add your favorites.
    • Cream of Chicken Soup: Gives that creamy, classic broth flavor to the stuffing.
    • Cream of Celery Soup: Infuses great vegetable flavor and richness to the recipe.
    • Chicken Broth: Adds richness and keeps all of the ingredients moist.
    • Poultry Seasoning: My secret ingredient for easy seasoning. You can also use a mixture of dried sage, thyme, rosemary, and marjoram.
    • Stuffing Mix: Store-bought stuffing mix also makes this homemade recipe so simple to prepare.
    • Butter: Adds richness in flavor and prevents the stuffing and meat from being too dry.

    Tool's You'll Need

    • Crockpot: Use a 6-quart or larger Crockpot. Ideally, an 8-quart Crockpot like this one fits the chicken in one layer.
    • Liquid Measuring Cups
    • Measuring Cups and Spoons
    • Large Skillet 
    • Cutting Board
    • Chef's Knife

    Pro Tip: My secret ingredient in this recipe is using poultry seasoning. It's a blend of dried sage, thyme, rosemary, marjoram, and nutmeg. Use one spice blend rather than having to buy five or six at the store!

    How to Make Crockpot Chicken and Stuffing Casserole

    1. Heat a tablespoon of oil in a skillet on medium-high heat and sear 1 to 2 minutes per side. Remove the chicken from the skillet.

    1. In the same skillet on medium-high heat, cook the vegetables, 2 to 3 minutes until just softened.

    1. Lightly grease the inside of the slow cooker with butter or cooking spray.
    2. Add the chicken to the bottom of the slow cooker in a single layer. Season with salt and pepper to taste.
    3. Evenly add the vegetables over the top of the meat.

    1. In a medium mixing bowl, stir together the condensed cream of chicken soup, condensed cream of celery soup, poultry seasoning, and ½ cup of broth. Mix well until smooth.

    1. Pour the soup mixture evenly over everything in the crockpot.
    2. In a separate medium bowl, stir together the stuffing mix, melted butter, and remaining broth. Spread the stuffing mixture evenly over the soup mixture in the crockpot.

    1. Cover and cook on low heat for 6 to 8 hours or on high heat for 3 to 4 hours, or until the chicken is cooked through and stuffing is cooked and slightly crisp on top.
    2. Once the casserole is done cooking, serve directly from the crockpot.

    Chicken and Stuffing Casserole in the Oven

    This delicious Crockpot casserole can easily be adapted to be made in the oven. Simply follow the recipe the same as the Crockpot and create the layers, chicken, vegetables, gravy, stuffing, in a 13"x9" baking dish.

    Cover tightly with aluminum foil. Bake in a preheated 350°F oven for 30 minutes. Remove the foil and bake an additional 30 minutes. Use a meat thermometer to ensure the chicken is cooked through.

    Expert Tips

    • Avoiding mushy stuffing. Be sure to add only the measured amount of liquid or else you may have watery or liquidy stuffing. The slow cooker needs less liquid than a stovetop cooking method.
    • Avoiding dry stuffing and chicken. Add a ½ cup of extra broth at a time during cooking if you are noticing the meat or stuffing is dry.
    • Sear the chicken for extra flavor. This step is optional, but for more depth of flavor, try searing the meat first before putting into the slow cooker.
    • Swap Cream of Celery Soup for homemade. You can swap the canned soup for my homemade cream of mushroom soup recipe.
    • Use frozen veggies in a pinch. This recipe also works great with frozen vegetable medley to make it easier at meal prep time.
    • Flexible cooking times. You can cook this on high heat for 3 to 4 hours or low heat for 6 to 8 hours until the protein is cooked through.

    Storage & Freezing Instructions

    When it comes to storing the leftover crockpot chicken and stuffing, place in an airtight container in the fridge for up to 5 days. Reheat in the microwave for a couple of minutes until warm.

    I don't recommend freezing this recipe, it will compromise the texture of the stuffing and become mushy.

    Variations and Substitutions

    • Reduce the sodium. Use lower sodium broth instead of regular chicken broth if looking to reduce the salt content.
    • Change the stuffing. Try also using boxed cornbread stuffing mix too, another delicious variation on the recipe!
    • Add other spices and herbs. Use any dried or fresh herbs, spices and seasonings you like. Sometimes I add cayenne pepper for a bit of spice.
    • Top with cheese as desired. If you love an ooey gooey cheesy topping, sprinkle with shredded cheddar 30 minutes before serving.
    • Add other vegetables. I've also made this recipe with fresh or frozen corn, peas, and green beans. All are delicious!

    What to Serve with Crockpot Chicken and Stuffing Casserole

    There are so many side dish recipes that pair perfectly with this slow cooker chicken and stuffing.

    Gremolata green beans and Outback-inspired House Salad are two of my favorites. Sautéed Mushrooms and Onions is also a versatile side dish that's full of flavor and pairs perfectly with it.     FAQs

    Do I need to sear the chicken before adding to the slow cooker?

    This step is optional, but I recommend searing the chicken before adding to give more depth of delicious flavor to the recipe.

    What seasonings and herbs can I add to the recipe?

    I use a store-bought poultry seasoning. Fresh thyme, rosemary, and parsley would also be nice. I also sometimes add a pinch of cayenne pepper for heat.

    What other vegetables would be delicious in Crockpot Chicken Stuffing Casserole?

    We have also used carrots, fennel, and greens like sautéed kale, in this recipe. All have been so delicious.

    How do I reduce the salt content in chicken and stuffing?

    Use low sodium chicken broth as well as low sodium cream of mushroom and celery soup. You can also season with less salt as well.

    My slow cooker stuffing is too moist, what do I do?

    Try adding in additional cubes of fresh white bread during the cooking process to absorb excess moisture.

    Ingredients
     

    • 2-2 ½ pounds boneless skinless chicken breasts or thighs
    • Salt and Black Pepper amount as desired
    • 2 cups chopped vegetables (celery, onion, mushrooms) Optional
    • 10.5 ounce can low-sodium condensed cream of chicken soup
    • 10.5 ounce can low-sodium condensed cream of celery soup
    • 1 cup chicken broth divided
    • 1 teaspoon flaky poultry seasoning
    • 6 ounce box stuffing mix
    • ¼ cup butter melted

    Instructions

    • Optional step, season and sear chicken cutlets and vegetables first. Heat a tablespoon of oil in a skillet on medium-high heat and sear 1-2 minutes per side. Remove from the skillet.
    • In the same skillet on medium-high heat, sauté the chopped vegetables, 2-3 minutes.
    • Lightly grease the inside of your crockpot with butter or non-stick cooking spray.
    • Place the chicken in the bottom of the crockpot in a single layer. If not previously seasoned with salt and pepper before searing, add amount as desired.
    • Evenly disperse vegetables on top, if using.
    • In a mixing bowl, combine the condensed cream of chicken soup, condensed cream of celery soup, poultry seasoning, and ½ cup of the chicken broth. Mix well until smooth.
    • Pour the soup mixture evenly over the vegetables and chicken in the crockpot.
    • In a separate bowl, mix together the stuffing mix. melted butter, and remaining chicken broth. Spread the stuffing mixture evenly over the soup mixture in the crockpot.
    • Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the chicken is cooked through and the stuffing is cooked and slightly crisp on top.
    • Once the chicken and stuffing casserole is done cooking, you can serve it directly from the crockpot.
