    Laura's Tip: To achieve the perfect roasted cauliflower parmesan slice, peal away the leaves, clean, dry, and leave the stalk completely intact. Using a sharp chef's knife, cut from the top through the stalk in ½-inch slices. These are also often called cauliflower steaks. Any thinner and it will break apart into smaller pieces. You can also prepare larger florets instead of slices if you prefer. Smaller heads of cauliflower slice and hold their shape better than larger ones.

    • Half Size or 12"x17" Sheet Pan
    • Measuring Cups and Spoons
    • Rotary Cheese Grater (optional)
    • Chef's Knife
    • Cutting Board

    How to Make Parmesan Roasted Cauliflower

    1. Preheat oven to 400°F. Line a large rimmed baking sheet with aluminum foil or parchment paper. 
    2. Trim the cauliflower from its leaves and slice into large slices from the top to the core, about a ½” thick. It should yield about 8-10 slices. 
    1. Lay on the prepared sheet pan and spray both sides of the cauliflower slices with the olive oil spray. 
    1. For the crust, in a small bowl, whisk together melted butter, panko, garlic salt and parmesan cheese. Evenly distribute the crust on the top of the cauliflower slices. Optional, sprinkle with cayenne pepper. 
    1. Bake for 25-30 minutes or until the crust is golden brown.

      Very tasty cauliflower. Be sure to coat both sides with oil. You could also season each piece separately. Tasty seasoned crumbs. Came out very tender. Even my husband tried some and he’s not a fan of the vegetable.
