Bacon Egg Salad

Grating the eggs makes an incredible texture for egg salad. If you love traditional egg salad, just wait til’ you try it with bacon. What’s NOT better with bacon?!?

Ingredients
 

  • 6 hard boiled eggs peeled and grated or chopped
  • 1/3 cup cooked and crumbled bacon
  • 2 green onions thinly sliced
  • 4 tbsp mayonnaise
  • 1/2 tbsp dijon mustard
  • 1/4 tsp salt
  • White Sandwich Bread

Instructions

  • In a medium bowl, combine eggs, bacon, green onions, mayonnaise, dijon mustard and salt. Fold the ingredients until well combined. Serve your favorite egg salad way.

    LOVE this bacon egg salad recipe – especially on fresh mini-croissants! It’s SO appreciated after my daughter’s Lacrosse morning practices as they’re all craving some good protein and starving LOL! Perfect recipe as it’s not heavy on the mayo but has lots of flavor too! Thanks Laura! 🙂
