These Turkey and Stuffing Rollups are an easy 8 ingredient weeknight dinner to feel like you’re having Thanksgiving any time of the year. It’s a dish with comforting and cozy flavors that the whole family will enjoy.

Laura Ashley’s Tip: You’ll want thicker slices of oven roasted turkey for this recipe. I like to go to the deli counter and ask for them to slice it by hand to make sure it’s the correct thickness so it doesn’t break when I roll the turkey with the filling. A thickness of “5” is what works best for us!

  • Thick slices oven roasted deli turkey breast: We love the oven roasted deli turkey here since it’s rich in flavor. Ask the deli to cut your turkey in whole slices on a thick setting of 4 or 5 (we like it on a 5). You can also use leftover Thanksgiving day turkey.
  • Boxed stuffing mix: All of your favorite stuffing flavors with the ease of using boxed stuffing to cut down on prep time. You can also use leftover homemade dressing or stuffing.
  • Turkey or chicken broth or stock: Hydrates the stuffing and adds richness to the stuffing.
  • Unsalted butter: Adds moisture, rich flavor and depth.
  • Dried cranberries: Adds a hint of sweetness and tang.
  • Shredded Swiss cheese: Adds mild cheesy flavor in every bite.
  • Cream of chicken soup: Keeps the turkey rollups moist and flavorful.
  • Turkey gravy: With all of these Thanksgiving flavors, we have to add gravy of course! It also helps to keep the meat juicy when baking.
  • Optional Garnishes: We love to also add additional turkey gravy, cranberry sauce, and/or fresh snipped parsley

Tools You’ll Need

How to Make Turkey and Stuffing Rollups

  1. Preheat oven to 350°F. Grease a 13×9-inch baking dish with nonstick spray or butter.
  2. In a medium saucepan, add chicken or turkey broth or stock and butter. Once the butter has melted and mixture comes to a boil, add cranberries. Allow them to cook for 30 seconds.
  3. Turn off the heat and stir in the box of stuffing. Cover and allow the stuffing to rest for 30 seconds.

  1. Fold Swiss cheese into the stuffing mixture.
  2. Arrange the turkey slices on a cutting board or flat surface. Disperse the stuffing mixture on the middle of each turkey slice. Roll up and place seam side down in the prepared dish. Repeat this process for all the turkey slices.

  1. In a large mixing bowl, whisk together cream of chicken soup and turkey gravy until smooth. Pour the gravy over the turkey stuffing rolls and spread evenly.

  1. Cover tightly with foil and bake for 30 minutes. Uncover and bake another 10 minutes or until heated through and bubbly at the edges of the pan. Serve with garnishes as desired.

Expert Tips

  • Don’t overstuff the turkey rollups. Divide it up evenly between the slices before rolling them up.
  • Use leftover stuffing instead of boxed stuffing if you have it. This is a great meal for the day after Thanksgiving to use up those leftovers.
  • Cover the baking dish with foil to prevent the rollups from drying out. This will keep everything nice and moist, rather than dry and rubbery.
  • Customize with your own ingredients. You can add cranberry sauce or even a little dollop of mashed potatoes or sweet potatoes to the inside of the rollups to make them extra delicious!
  • Homemade cream of chicken soup. Combine 3 tablespoons butter in a saucepan over medium heat. Whisk in ⅓ cup all-purpose flour and cook for 1 minute. Whisk in ⅓ cup milk and ⅓ cup chicken broth until well combined. Season with ¼ teaspoon onion powder and salt and pepper to taste. Stir and cook for 1-2 minutes or until thickened and creamy.
  • Homemade stove top stuffing. Combine 6 cups toasted bread cubes, 1 tablespoon parsley flakes, 3 chicken bouillon cubes or 1 tablespoon salt free chicken bouillon powder, 1/4 cup dried onion flakes, 1/4 cup dried celery flakes, 1 teaspoon thyme, 1 teaspoon sage, 1/2 teaspoon black pepper, and 1/2 teaspoon salt.
  • Homemade turkey gravy. Bring 4 cups of turkey broth or stock mixed to a boil. Mix ⅓ cup cornstarch with ⅓ cup cold water, then whisk it into the boiling broth gradually until thickened. Stir in 2–3 tablespoons of fresh herbs like parsley, thyme, and sage, then season with salt and pepper to taste. You’ll need 12 ounces of this for the gravy for the rollups.

Storage

Store any leftovers in an airtight container in the fridge for up to 4-5 days. Reheat in the oven or microwave. Add a spoonful of extra gravy before reheating to make sure the turkey and stuffing rollups stay moist.

This isn’t a great recipe for freezing, it can change the texture of both the turkey and the stuffing after it’s thawed.

    I made these for Friendsgiving and they were a hit! The lady at the deli counter recommended a 3.5 slice for the texture of the meat they had and it turned out great. A great tasting recipe that was simple to put together yet festive!

    Kids called them turkey burritos. I used smoked Gouda cheese and a homemade gravy and kept everything else the same. It was amazing! Husband said it tasted just like Thanksgiving! Thanks!

    My roll ups turned up very dry . I’m assuming because they are already cooked from the deli and it’s white meat. I did put a lot of gravy under and over the roll ups.

    1. I’m sorry to hear that Anna! From the experiences everyone has shared so far, this has not happened. I used Butterball and it was super juicy. The only troubleshoots I’d say for this is to make sure your dish is covered really well with foil, ensure the slices are thick and high quality, and adequate spread of the gravy on top before baking. I hope this helps if you make it again.
