Peanut brittle was always one of my favorite Christmas treats growing up. The caramel-candy crunch with the salty peanuts is so delicious. I’ve made this easier Microwave Peanut Brittle for years. It’s so much simpler than the stovetop method and also creates less mess too.

How to Make Microwave Peanut Brittle

  1. Grease a baking sheet with butter or line it with parchment paper.
  2. In a large microwave-safe glass bowl, stir together sugar and corn syrup until combined. Microwave on high for 4 minutes.

  1. Stir in the peanuts, then microwave again on high for 3 to 4 minutes, until the mixture turns a light golden color. (Watch closely. Microwaves vary, and it can burn quickly.)

  1. Remove from the microwave and quickly stir in, butter, vanilla, and baking soda.

  1. Immediately pour the mixture onto your prepared baking sheet and spread it thin with a spatula (spray it with nonstick spray for easier spreading). Let cool completely, about 30 minutes.

It wasn’t cooked long enough to make it to the caramel stage. This is called “hard crack stage” and it’s when the sugar reaches about 300ºF-310ºF.

Can I use another nut besides peanuts?

Yes, while peanuts are classic you could also use walnuts or pecans.

What happens if you microwave the peanut brittle for too long?

The caramel base will burn. You want to make sure you just reach the caramel stage.
