Chopped Salad

Who wants a new, exciting salad?? That’s right! I used the words “exciting” and “salad” in the same sentence…because they can coexist!

Ingredients

  • Salad:
  • 3 romaine lettuce heads, chopped
  • 1/2 head of kale, chopped
  • 1 cucumber, peeled, seeded & diced
  • 2 tomatoes, seeded & diced
  • 32 slices salami, sliced & diced
  • 8 oz fresh mozzarella, sliced & diced
  • 15 oz garbanzo beans, drained
  • 1/2 cup shredded Parmesan
  • Dressing:
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp oregano
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 2 garlic cloves, minced
  • Recipe

    Combine dressing ingredients in a small bowl and shake or whisk until emulsified. Pour 2-3 tbsp of the dressing over the drained garbanzo beans and refrigerate 20 minutes. Meanwhile, prepare vegetables, meat, and cheese and combine in a large bowl. When ready to serve, toss the salad with marinated garbanzo beans and dressing (amount as desired). Top with shredded Parmesan.
