Who wants a new, exciting salad?? That’s right! I used the words “exciting” and “salad” in the same sentence…because they can coexist!

Ingredients
 

Salad

  • 3 heads romaine lettuce chopped
  • ½ head kale chopped
  • 1 cucumber peeled, seeded and diced
  • 32 slices salami diced
  • 8 oz fresh mozzarella diced
  • 15 oz garbanzo beans drained
  • ½ cup shredded parmesan

Dressing

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • ½ teaspoon oregano
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • 2 garlic cloves minced

Instructions

  • Combine dressing ingredients in a small bowl and shake or whisk until emulsified. 
  • Pour 2-3 tablespoon of the dressing over the drained garbanzo beans and refrigerate 20 minutes. 
  • Meanwhile, prepare vegetables, meat, and cheese and combine in a large bowl. 
  • When ready to serve, toss the salad with marinated garbanzo beans and dressing (amount as desired). Top with shredded Parmesan.
