Chicken Salad

Chicken salad is delicious for lunch, an appetizer for entertaining, a picnic, poolside…anytime! If you’ve never been to a Chicken Salad Chick restaurant, put that on your to-do list if there’s one in your area. They make so many variations that are super delicious that they keep you wanting to come back for more! Meanwhile, if you’re wanting to make a batch at home, this recipe is my go-to!

Ingredients

  • 2-2 1/2 lb boneless, skinless cooked chicken breasts, shredded (home-cooked or rotisserie)
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1 cup regular or light mayo
  • 1 cup chopped pecans
  • 2-3 tbsp honey Dijon mustard
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 2 cups quartered grapes
  • Recipe

    Combine cooled chicken, celery, red onion, pecans, Dijon mustard, sugar, and cinnamon, blend well with a hand mixer until ingredients are incorporated. Fold in grapes and taste chicken salad for balance of flavors.

    I’m so glad I found this recipe! I make chicken salad all the time, and I would have never imagined cinnamon being such a great addition. It is absolutely delicious!
