Chicken Salad Cold Plate

In my hometown of Estill County, Kentucky, one of my favorite springtime specials the restaurants would have was a “Cold Plate.” You could choose chicken salad or pimento cheese and it would come with crackers, veggies, fruit, ranch, and fruit dip. My go-to chicken salad is grape/pecan based, but this is another springy hit!

    1. Yes! My cucumber chicken salad, dill pickle chicken salad, savory chicken salad, and chicken salad croissant (sassy Scotty) all don’t have fruit and you can leave the nuts out if you’d like.

Chicken Salad is one of my ALL time favorite meals. You can do so much with it besides just make sandwhiches with it. I usually use a Rotisserie chicken I pick up or local Sam’s Club, which makes the salad so much better. I can’t wait to make this recipe the next time I have the girls over for a “catch up” day.
