    Roasted Ranch Baby Potatoes

    These simple Roasted Ranch Baby Potatoes are loaded with our favorite ranch flavors and goes with practically any dinner!

    With only 3 ingredients and minimal prep required, these delicious potatoes might become your next go-to, favorite side dish! They're coated with a mixture of oil and ranch seasoning, then roasted in the oven until they're tender on the inside and golden brown on the outside. Pair these Roasted Ranch Baby Potatoes with a protein and some vegetables and you'll have yourself a show-stopper dinner!

    Why You’ll like Roasted Ranch Baby Potatoes

    • Only 3 simple ingredients!

    • It's inexpensive! (Less than $5 where I live)
    • Potatoes are one of the superior vegetables (in my opinion)!

    How to Make This Recipe

    1. Wash and dry the potatoes. If they're larger than a gumball size, either halve or quarter them.
    2. Microwave the potatoes with a ½ cup water in a microwave-safe covered dish for 5 minutes, then drain any excess liquid.

    1. Directly in a large baking dish, mix together the potatoes, olive oil, and ranch seasoning. Spread the potatoes out in a single layer. If desired, season with additional salt and pepper.

    1. Roast the potatoes in the oven for 30-35 minutes, or until they are golden brown on the outside and tender on the inside.

    Tips and Substitutions

    • You can use store-bought ready-made ranch seasoning in this recipe or you can make it homemade. Here is my Homemade Ranch Seasoning.
    • Russet, fingerling, and white or yellow potatoes also work in this recipe. Simply halve or quarter them to nearly the size of a gumball.
    • If you prefer larger-size roasted potatoes, start with larger baby potatoes or quarter regular potatoes to your desired size. Adjust the cooking time higher to reflect this change in size. It will likely take 10-15 more minutes of roasting.
    • Want to add more flavor pizzazz to your Roasted Ranch Baby Potatoes? Add shredded cheese and cooked bacon pieces 10 minutes before the end of the baking time. They're also great served with grated parmesan cheese on top. Sour cream and chives are also an excellent accent to these simple roasted ranch baby potatoes.

    Storage

    • To store leftover roasted potatoes, allow them to cool to room temperature and then transfer them to an airtight container. You can store them in the refrigerator for up to 4-5 days.
    • You can also freeze these potatoes as well. First, freeze in a single layer on a plate or baking sheet then transfer them to a freezer-safe container or resealable plastic bag. Freeze for up to 3 months. Reheat these easy roasted ranch baby potatoes in the oven or microwave until heated through.

    Ranch seasoning mix can be substituted with an Italian dressing seasoning mix.

    Which potatoes work in this recipe?

    Russet, fingerling, red, white, or yellow potatoes all work in this recipe. Simply cut larger varieties into smaller chunks.

    Can these be made in the air fryer?

    YES! Air fry at 400℉ 20-25 minutes, tossing in between.

    What can I do with leftovers?

    Add leftovers to your favorite breakfast bowl or in a breakfast burrito. You can also reheat them in a preheated 350℉ oven for 10 minutes or pop them in the air fryer at 400℉ for 5 minutes.

    Can I make these potatoes ahead of time?

    These potatoes are best served when they come straight out of the oven, so it's not ideal to make them and let them rest for too long.

    Ingredients
     

    • 1 ½ lb baby potatoes cleaned and dried, halve or quarter if larger
    • 2 tbsp olive oil
    • 2 tbsp ranch seasoning homemade or store-bought
    • Salt and Black Pepper if desired

    Instructions

    • Preheat the oven to 425℉.
    • Pour the potatoes and ½ cup water in a microwave-safe bowl with a lid or cover with a paper towel. Microwave on high for 5 minutes.
    • Remove the potatoes from the microwave and drain an excess water. Pour the potatoes in a 3-quart baking dish or 13"x9". Toss with olive oil and ranch seasoning. If desired, add salt and pepper before or after baking.
    • Bake 30-35 minutes or until the potatoes are toasted and tender in the center.
