Roasted Ranch Baby Potatoes

- 1 1/2 lb baby potatoes cleaned and dried, halve or quarter if larger
- 2 tbsp olive oil
- 2 tbsp ranch seasoning homemade or store-bought
- Salt and Black Pepper if desired
Preheat the oven to 425℉.
Pour the potatoes and 1/2 cup water in a microwave-safe bowl with a lid or cover with a paper towel. Microwave on high for 5 minutes.
Remove the potatoes from the microwave and drain an excess water. Pour the potatoes in a 3-quart baking dish or 13"x9". Toss with olive oil and ranch seasoning. If desired, add salt and pepper before or after baking.
Bake 30-35 minutes or until the potatoes are toasted and tender in the center.
