    Mason Jar Mediterranean Salad

    Easy to assemble and loaded with fresh veggies and flavor, this salad is quick to become a new lunch favorite! Rich in phytonutrients and fiber, a layer of Pure Flavor® Gourmet Mini Cucumbers adds the perfect crunch and hydration to this delicious salad!

    Ingredients
     

    • 2 tablespoon Greek dressing
    • 2 tablespoon chopped red onion
    • 2 tablespoon sliced green olives
    • 1 ½ cups arugula
    • ½ cup cooked quinoa (plain or flavored)
    • ½ cup halved cherry tomatoes
    • 1 ½ cups arugula
    • ¼ cup sliced marinated artichoke hearts
    • 1 Pure Flavor® Gourmet Mini Cucumber cut into discs
    • 2 tablespoon halved kalamata olives
    • 2 tablespoon crumbled feta cheese

    Instructions

    • Add all ingredients in the order listed to a 1 pint jar. Cover and refrigerate until ready to eat.
    • Stored properly, the salad jars will last 3-5 days.
