    Sausage and Onion Sheet Pan Dinner

    This super simple, heart-healthy sausage and onion sheet pan meal will be quick to enter your dinner rotation! It takes less than 10 minutes to assemble and is loaded with delicious flavors!

    February is American Heart Month, a month dedicated to shining a light on heart health. It’s an initiative that encourages us to take a look at our own healthy habits and risks to improve our heart health and decrease the risk of heart disease.

    This sheet pan meal is an excellent option to incorporate in your heart-healthy meal plan. It’s loaded with fiber and nutrient-rich vegetables as well as lean protein. Onions 52 Red and Yellow Onions are the veggie star of this sheet pan show. They’re colorful, crisp, and delicious in so many recipes.

    Onions are low in calories and high in vitamins C and B as well as potassium and antioxidants. They can play an integral role in immune health, iron absorption, metabolism, and cellular and muscle function. As a heart health bonus, the nutrients in onions can help reduce cholesterol, improve blood pressure, and fight inflammation!

    • Turkey, Chicken, or Plant-Based Sausage

    How to Make Sausage and Onions Sheet Pan Dinner

    1. Clean, slice, and prep all of the veggies first.

    1. Directly on a parchment paper-lined sheet pan, toss together the onions, peppers, green beans, olive oil, vinegar, and dry seasonings. Spread in an even layer for optimal caramelization.

    1. Bake at 400°F for 15 minutes. 
    2. Carefully remove the sheet pan from the oven. Toss the par-cooked veggies with the fresh garlic and lay the sausage links on top. Return the sheet pan dinner to the oven to bake for an additional 15 minutes.

    1. Remove the sheet pan from the oven. Garnish and serve the delicious sausage and onions sheet pan mixture as is or try as one of the topping/filling options noted in Tips and Substitutions. 

    Tips and Substitutions

    • This dish is excellently served in many great ways:
      • Over whole grain rice
      • Inside a whole-grain bun
      • Inside a whole-grain wrap
      • Tossed with whole wheat noodles
      • Folded with marinara sauce and served over pasta
      • Over cauliflower rice
      • Inside an omelet
      • On top of whole wheat toast
    • You can use raw sausage for the sheet pan dinner. Simply add the sausage at the beginning of the bake time when the vegetables are first put in the oven and ensure a safe internal temperature is reached at the end of the total bake time.

    Storage

    • Store leftovers in an air-tight container in the refrigerator for up to 3 days
    • Leftovers can be frozen in an air-tight container for up to 3 months. Simply thaw overnight in the refrigerator before reheating.

    Ingredients
     

    • 1 small Onions 52 Red Onion sliced
    • 1 small Onions 52 Yellow Onion sliced
    • 2 cups sliced sweet mini peppers
    • 6 oz green beans
    • 2 tablespoon olive oil
    • 1 tablespoon red wine vinegar
    • 1 teaspoon Italian seasoning
    • ½ teaspoon crushed red pepper flakes optional
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 tablespoon fresh minced garlic
    • 1 ½ lb package pre-cooked turkey, chicken or plant-based sausage pierced with a fork
    • 1 cup sliced fresh basil

    Instructions

    • Preheat the oven to 400°F.
    • On a parchment paper-lined sheet pan, toss together onions, peppers, olive oil, vinegar, Italian seasoning, crushed red pepper, salt and pepper. Spread in an even layer and bake for 15 minutes. 
    • Remove the sheet pan from the oven and toss the vegetables with the fresh garlic. Lay the sausage links on top, and return the sheet pan to the oven. Bake 15 minutes.
    • Remove the sheet pan from the oven and toss with fresh basil. Serve the mixture as a stand alone dish or as desired (see Tips and Substitutions).
