Sausage and Onion Sheet Pan Dinner

- 1 small Onions 52 Red Onion sliced
- 1 small Onions 52 Yellow Onion sliced
- 2 cups sliced sweet mini peppers
- 6 oz green beans
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes optional
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh minced garlic
- 1 1/2 lb package pre-cooked turkey, chicken or plant-based sausage pierced with a fork
- 1 cup sliced fresh basil
Preheat the oven to 400°F.
On a parchment paper-lined sheet pan, toss together onions, peppers, olive oil, vinegar, Italian seasoning, crushed red pepper, salt and pepper. Spread in an even layer and bake for 15 minutes.
Remove the sheet pan from the oven and toss the vegetables with the fresh garlic. Lay the sausage links on top, and return the sheet pan to the oven. Bake 15 minutes.
Remove the sheet pan from the oven and toss with fresh basil. Serve the mixture as a stand alone dish or as desired (see Tips and Substitutions).
