    Johnny's Skilletini

    Johnny’s Skilletini

    This is my version on the delicious classic from Johnny Carino’s…Johnny’s Skilletini!

    Ingredients
     

    • 8 oz spaghetti
    • 1 lb Italian sausage 2 to 3-inch slices
    • 1 green bell pepper cut into strips
    • 1 yellow onion cut into strips
    • 24 oz marinara sauce
    • ¼ teaspoon salt
    • ¼ tsp black pepper
    • Parmesan cheese shredded
    • Optional add-ins: garlic and crushed red pepper

    Instructions

    • Bring a stockpot of salted water to a boil. Cook spaghetti per package directions then drain. 
    • To a large cast-iron skillet on medium-high heat, sear sausage on both sides until browned and cooked through. Transfer the sausage to a paper towel-lined plate. 
    • To the skillet, add bell pepper and onion and season with salt and black pepper. Sauté, stirring often, until the veggies are tender, about 5-7 minutes. Transfer the cooked veggies to a plate and turn the heat to low. 
    • Once the pan has cooled, add the pasta sauce. Once the sauce has warmed, fold the pasta and cooked sausage into the sauce. Add the onions and peppers around the edge of the pan, and garnish with Parmesan cheese.

      I was a cook at Johnny Carinos for a few years. this recipe is wrong. the onion and peppers are marinated in a soy sauce mixture that I can't quite remember. I thought you might have cracked it but you didn't have it anywhere near the true recipe.

        Good to know! I didn't work at Johnny Carino's or have their cookbook, but this is the best dupe I've created. I'll do more research to try to perfect it with a marinated soy sauce method for the peppers. Thanks for the tip.

      Hi, Laura! I think you forgot to add the pasta sauce to the list of ingredients. I'm looking forward to making this! Thanks for posting this recipe. There used to be a Johnny's near me, but that location closed a few years ago and I was craving this so I'm going to give it a try!

        Have you had a chance to fine tune this recipe since getting input from the Carino’s cook? Also wondering if Carino’s using hot or mild Italian sausage? One of my fave dishes and want to recreate. Thanks

        I have this on my list to make again. It was not hot Italian sausage that they used.
