Viral Pickle Sandwich (Low-Carb)

Ingredients
 

  • 8 sandwich slice pickles
  • 1 1/2 cups Borden Cheese shredded triple cheddar cheese or sharp cheddar cheese
  • 1-2 tablespoons mayonnaise
  • 3-4 slices cooked thick bacon
  • 4-6 slices deli turkey
  • 4-6 slices deli ham
  • 1 small tomato sliced
  • 3 green leaf, romaine or iceberg lettuce leaves
  • 1/8 cup sliced red onion

Instructions

  • Preheat oven to 400°F.
  • Place the pickle slices between 2 paper towels. Pat gently until they're dry.
  • On a parchment-lined baking sheet, working with half of the cheese, create 2 separate rectangles that will both match the size of 4 sandwich pickle slices (see picture for reference). Add the pickle slices on top of each rectangle. Evenly sprinkle on top of the pickle slices the remaining shredded cheese.
  • Bake 20-24 minutes until crispy and golden around the edges. Once finished, remove from the oven. Carefully and gently pat any excess grease from the top. Cool 10 minutes.
  • Carefully transfer one baked cheese crust onto a cutting board. Top with your desired amounts of mayonnaise, bacon, ham, turkey, tomato, lettuce, and red onion. Add the second baked cheese crust to the top.
  • Slice and enjoy immediately!
