Tater Tot Breakfast Casserole

This easy-to-make Tater Tot Breakfast Casserole is made all in one skillet and is sure to be a huge hit with your family and friends. We use sausage in ours and lots of gooey cheese so every bite is insanely delicious.

Ingredients
 

  • 1 lb ground breakfast sausage
  • 1/2 cup diced bell peppers
  • 3 sliced green onions green and white sections divided
  • 1/2 pint halved tomatoes
  • 2 cups shredded cheddar cheese divided
  • 8 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 28 oz tater tots
  • Garnish options: halved tomatoes, thinly sliced chives, hot sauce

Instructions

  • Preheat the oven to 350˚F. 
  • In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease. Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes. 
  • Turn off the heat, and add the tomatoes on top in an even layer. Sprinkle 1 1/2 cups of the shredded cheese on top. 
  • In a large mixing bowl, whisk together eggs, milk, salt and pepper. Pour evenly in the skillet.
  • Arrange the frozen Tater Tots over the egg mixture in a single layer in concentric circles, starting with a row along the edge of the pan and working your way in. Sprinkle evenly on top the remaining Borden® Cheese.
  • Bake 35-40 minutes or until the eggs have fully set and the top is golden brown and cripsy.
  • Cool 5 minutes prior to serving. Garnish with additional tomatoes, chives and hot sauce on the side.

Tips and Substitutions

  • Mix it Up: Feel free to add in additional toppings like cooked bacon, diced mushrooms, or your favorite spices to customize your casserole even further.
  • Shortcut: Use pre-cooked sausage or a breakfast sausage blend for even quicker preparation.
  • Pan Options: You can also bake this recipe in a 13x9 casserole dish. Simply make the cook the sausage and onions in a large skillet, transfer to your baking dish, then proceed with the recipe as written.
  • Make Ahead: Prepare the casserole the night before and refrigerate. Just add an extra 10-15 minutes to the baking time if baking straight from the fridge.
  • Sausage: Substitute turkey sausage, chicken sausage, Italian sausage, smoked sausage, or a plant-based sausage for a lighter or vegetarian version.
  • Cheese: Try swapping cheddar cheese for Monterey Jack, Colby jack, pepper jack cheese, or a dairy-free cheese alternative.
  • Vegetables: Use a mix of your favorite veggies—spinach, zucchini, or sautéed mushrooms make great additions!
  • Tots Tip: The tater tots should be frozen when baked to avoid overcooking. Shredded or diced frozen hash browns can be a great alternative to tater tots. Just make sure they are well compressed to create a nice crispy topping.

Storage and Freezing

Leftover tater tot breakfast casserole can be stored in an airtight container in the refrigerator for up to 3-4 days. If you freeze it, it can last up to 2-3 months.

Like many casseroles, this one can be frozen, thawed, and reheated as well. After it's cooked and completely cooled, either store it in an air-tight container or wrap it securely with cling wrap followed by aluminum foil. Thaw overnight in the refrigerator before reheating. It can be frozen for up to 2 months.
