Ingredients
1 ½poundsnew potatoeswashed and quartered
¼cupolive oil
1-2tablespoonschili garlic oil
2 teaspoonsItalian seasoning
Salt and Black Pepper to taste
Instructions
Preheat oven to 425°F.
In a large bowl, combine the potatoes, olive oil, chili garlic oil, Italian seasoning, salt, and pepper. Mix the ingredients together until well combined.
Place potatoes in a single layer on a baking stone or sheet pan lined with parchment paper or aluminum foil. Make sure they are spread out evenly to ensure they roast evenly.
Bake 30-35 minutes, stirring once halfway through cooking, until they are golden brown and crispy on the outside, and fork-tender on the inside.
Once the potatoes are done, remove them from the oven and transfer to a serving dish. If desired, sprinkle with sea salt or kosher salt and garnish with chopped fresh parsley or shredded parmesan cheese.

Potato Varieties, Size, and Cooking Time: The size of the tater cubes and type used will change the time to achieve the perfect roasted exterior and soft center. Baby yellow potatoes will take 35-40 minutes. Quartered Yukon gold potatoes should take 40-45. Any larger than 1-inch then you'll need to increase the roasting time.
Kind of Potatoes: You can substitute red baby potatoes with your favorite type. Cubed russet, yellow, and sweet potatoes all work great. Adjust the roasting time as needed. Leaving the potato skin on is personal preference.
