Italian Roasted Potatoes

These 4 ingredient Italian Roasted Potatoes are a favorite easy side dish recipe. They're prepped in less than 10 minutes with Italian seasoning and absolutely delicious! With crispy edges and a fluffy interior, they're ideal to pair with most main courses.

Ingredients
 

  • 1 ½ pounds new potatoes washed and quartered
  • ¼ cup olive oil
  • 1-2 tablespoons chili garlic oil
  • 2 teaspoons Italian seasoning
  • Salt and Black Pepper to taste

Instructions

  • Preheat oven to 425°F.
  • In a large bowl, combine the potatoes, olive oil, chili garlic oil, Italian seasoning, salt, and pepper. Mix the ingredients together until well combined.
  • Place potatoes in a single layer on a baking stone or sheet pan lined with parchment paper or aluminum foil. Make sure they are spread out evenly to ensure they roast evenly.
  • Bake 30-35 minutes, stirring once halfway through cooking, until they are golden brown and crispy on the outside, and fork-tender on the inside.
  • Once the potatoes are done, remove them from the oven and transfer to a serving dish. If desired, sprinkle with sea salt or kosher salt and garnish with chopped fresh parsley or shredded parmesan cheese.

Notes

  • Uniform Slicing: Cut the potatoes into uniform sizes to ensure even cooking. 
  • Dry the Potatoes: After cleaning, make sure the potatoes are dried well as they'll crisp up better during baking. 
  • Potato Varieties, Size, and Cooking Time: The size of the tater cubes and type used will change the time to achieve the perfect roasted exterior and soft center. Baby yellow potatoes will take 35-40 minutes. Quartered Yukon gold potatoes should take 40-45. Any larger than 1-inch then you'll need to increase the roasting time. 
  • Kind of Potatoes: You can substitute red baby potatoes with your favorite type. Cubed russet, yellow, and sweet potatoes all work great. Adjust the roasting time as needed. Leaving the potato skin on is personal preference.
  • Garnish Options: Adding grated Parmesan cheese on top during the last 5 minutes of baking adds another level of deliciousness! Bacon bits, sour cream, and garlic aioli are also excellent additions!
  • Fresh Garnishes: After baking, garnish with fresh chopped parsley, chives, or green onions. 
  • Olive Oil Substitution: Melted butter, avocado oil, or coconut oil can be used in place of olive oil.
  • Chili Garlic Oil Substitution: Additional olive oil or butter can be used in place of chili garlic oil. You can also use ready-made store-bough chili garlic oil or homemade.
