Ritz Cracker Cookies (No-bake, 3-ingredients!)
These 3-ingredient no-bake Ritz Cracker Cookies are the easiest cookie recipe made with Ritz crackers, peanut butter and white chocolate. Decorate them for any party or event throughout the year!

- Ritz Crackers
- Creamy Peanut Butter
- Vanilla Candy Coating
- Red/Green Food Coloring
Instructions
- Place 1 1/2 teaspoons peanut butter in the center of a cracker, spread to within a 1/4-inch of the edge and place another cracker on top. (I like the salty sides of the cracker to be on the outside).
- Melt candy coating in the microwave, stirring every 20 seconds until smooth. Dip each peanut butter cracker in the coating, ensuring all surfaces are covered, slide the bottom of the cracker along the side of the dish to remove some of the excess coating, and place on wax paper.
- Once all of the peanut butter crackers have been dipped, take some additional melted candy coating and mix with food colorings in separate bowls to desired color shades. Pour each color in their own Ziploc bag. Working with one at a time, snip the corner with scissors and drizzle the coating along each cracker in lines. Repeat with the second color, criss- crossing the other color.
- Allow the cookies to harden, pull from wax paper and break off any excess coating.

- Assembly and Cleanup Tips: Wear gloves or use 2 forks for peanut butter cracker dipping. With the fork method, you'll use 1 fork to dip the crackers in melted coating and the other to gently slide it off the first fork onto parchment paper or wax paper.
- Melting White Chocolate or Vanilla
Candy Coating: Melt gently using a double boiler or in short bursts in the microwave to prevent burning. Stir frequently for even melting. - Even Coating: Ensure each cracker is evenly coated with peanut butter and candy coating or white chocolate for a balanced flavor in each bite.
- Chill for Setting: Allow the cookies to set completely on parchment paper before transferring to a storage container. Chill in the refrigerator or freezer for them to set faster.
- Peanut Butter Alternatives: If needed, substitute peanut butter with almond butter, cashew butter, or sunflower seed butter. Each will provide a slightly different flavor profile. Nutella (hazelnut spread) or cookie butter are also delicious fillers.
Mixing equal parts peanut butter and marshmallow fluff is also super yummy! - Vanilla Candy Coating Substitutes: Chocolate almond bark or melted chocolate can also be used for dipping. You can use white chocolate chips, dark chocolate, milk chocolate, or a combination for a different chocolatey twist. Chocolate wafers tend to melt more easily.
- Cracker Variety: Experiment with different crackers or cookies as a base. Graham crackers or buttery shortbread can be an yummy alternatives.
- Nut Additions: Mix in chopped nuts such as almonds, pecans, or walnuts for added crunch and flavor.
- Flavor Enhancements: Add a dash of vanilla extract, cinnamon, or a pinch of sea salt to enhance the overall flavor of the filling.
