Pimento Cheese Macaroni Salad

This pimento cheese macaroni salad is creamy, tangy, and packed with bold Southern flavor. Made with Palmetto Cheese Homestyle Pimento Cheese, it’s an easy side dish that instantly elevates any meal.

Ingredients
 

  • 2 cups elbow macaroni
  • 11 ounce tub Palmetto Cheese Homestyle Pimento Cheese
  • 1/2 cup salad dressing or mayonnaise
  • 1/3 cup dill or sweet relish
  • 1/4 cup sliced green onions
  • 1-2 tablespoons milk as needed
  • sugar, salt, black pepper amount as desired

Instructions

  • Cook elbow macaroni in boiling salted water per package directions. Drain in a colander and rinse with cool water.
  • In a large bowl, combine Palmetto Cheese Homestyle Pimento Cheese, mayonnaise or salad dressing, relish, and green onions. Mix until combined well.
  • Fold the cooled pasta into the mixture. Add milk to desired pasta salad consistency.
  • Taste and add sugar, salt, and/or black pepper as desired.
  • Chill for at least 1 hour before serving.

Notes

Storage

Store in an airtight container in the refrigerator for up to 3–4 days. Stir before serving, as the dressing may thicken when chilled. Add a splash of milk if needed to refresh the creamy texture. I don't recommend freezing due to the creamy base.

Tips

  • Rinse your pasta with cool water to keep it from overcooking and sticking.
  • Let it chill before serving. This helps the flavors fully develop.
  • Adjust the relish to taste depending on if you prefer sweet or tangy.
  • Add milk (a little at a time) to avoid thinning it too much.
  • Use quality pimento cheese like Palmetto Cheese for the best flavor payoff.
