High Protein Overnight Oats

Ingredients
 

  • 2 cups old-fashioned rolled oats
  • 2 1/2 cups Lifeway Kefir (plain or flavored)
  • 4 teaspoons chia seeds
  • 3 tablespoons honey or maple syrup or to taste
  • 1 teaspoon vanilla extract or paste
  • 2 cups bite-sized fresh fruit of your choice
  • pinch of salt
  • 1 cup granola optional for topping

Instructions

  • In a large bowl, stir together the rolled oats, Lifeway Kefir, milk, chia seeds, honey, vanilla, salt and 1 cup of the fruit until well combined.
  • Divide the mixture evenly among 5 12-ounce mason jars.
  • Add the remaining fresh fruit to each jar.
  • Seal the jars with their lids and refrigerate overnight or for at least 6 hours.
  • In the morning, give each jar a good stir. If the oats are thicker than you like, add a splash of kefir and stir to loosen.
  • If using, top with granola just before serving.
