Green Goddess Salad

Ingredients
 

Dressing

  • 3/4 cup plain Lifeway Kefir
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves
  • 1/2 cup fresh herbs parsley, basil, and/or chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 small avocado

Salad

  • 2 cups finely chopped green cabbage
  • 2 cups finely chopped romaine lettuce
  • 1 cup diced cucumbers
  • 1/3 cup sliced green onions
  • 1/4 cup chopped fresh herbs parsley and/or basil
  • Optional protein addition: cooked grilled chicken, salmon, shrimp, or steak
  • Optional toppings: cheese of choice, crushed parmesan crisps, crispy chickpeas

Instructions

  • Finely chop the cabbage, romaine, cucumbers, and green onions. Add them to a large bowl.
  • In a blender or food processor, combine Lifeway Low-fat Plain Kefir, olive oil, lemon juice, garlic, fresh herbs, salt, and pepper. Blend until smooth and creamy.
  • Pour the dressing over the salad and toss until everything is evenly coated.
  • Serve immediately or chill briefly before serving for extra freshness. Add additional toppings and/or protein as desired.

Notes

Instructions

  • Dressing: Store in an airtight container in the refrigerator for up to 3 days. Stir before using.
  • Salad (undressed): Keep chopped veggies in an airtight container for up to 2–3 days.
  • Dressed salad: Best enjoyed fresh, but can be stored for up to 24 hours (the greens will soften over time).
