Dressing
- 3/4 cup plain Lifeway Kefir
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 garlic cloves
- 1/2 cup fresh herbs parsley, basil, and/or chives
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 small avocado
Salad
- 2 cups finely chopped green cabbage
- 2 cups finely chopped romaine lettuce
- 1 cup diced cucumbers
- 1/3 cup sliced green onions
- 1/4 cup chopped fresh herbs parsley and/or basil
- Optional protein addition: cooked grilled chicken, salmon, shrimp, or steak
- Optional toppings: cheese of choice, crushed parmesan crisps, crispy chickpeas
Finely chop the cabbage, romaine, cucumbers, and green onions. Add them to a large bowl.
In a blender or food processor, combine Lifeway Low-fat Plain Kefir, olive oil, lemon juice, garlic, fresh herbs, salt, and pepper. Blend until smooth and creamy.
Pour the dressing over the salad and toss until everything is evenly coated.
Serve immediately or chill briefly before serving for extra freshness. Add additional toppings and/or protein as desired.
Instructions
- Dressing: Store in an airtight container in the refrigerator for up to 3 days. Stir before using.
- Salad (undressed): Keep chopped veggies in an airtight container for up to 2–3 days.
- Dressed salad: Best enjoyed fresh, but can be stored for up to 24 hours (the greens will soften over time).
