Farmer Cheese Japanese Cream Sandwiches

Ingredients
 

  • 1 cup Lifeway Farmer Cheese
  • 1 tablespoon Lifeway kefir plain or vanilla`
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 4-5 thick-cut slices Japanese milk bread, brioche or challah
  • 1/2 cup neutral oil

Strawberry

  • 1 tablespoon finely diced strawberries

Mocha

  • 1/2 teaspoon cocoa powder
  • 1/4 teaspoon espresso powder
  • 2-3 teaspoons mini chocolate chips

Churro

  • 1/4 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • 1 teaspoon cinnamon Sugar

Tropical

  • 1/2 teaspoons finely diced mango
  • 1/2 teaspoon finely diced pineapple
  • 2-3 teaspoons toasted coconut

Instructions

  • In a medium bowl, combine Lifeway Farmer Cheese, Lifeway Kefir, powdered sugar, vanilla, and salt. Beat until smooth with a hand mixer.
  • Divide the cream evenly into 4 bowls.
  • Heat oil in a skillet over medium heat. Once hot, fry each slice of bread in the oil until golden and lightly crisp on both sides, about 20-30 seconds per side. Transfer to a cooling rack and cool completely.
  • Cut each slice diagonally to form two triangles. Using a small knife, cut a pocket into the center of each triangle (without cutting through the edges).
  • Fill the pocket with the flavored cream fillings and garnish as noted:
  • Strawberry flavor: Mix strawberries into 1 bowl of the cream. Spoon the strawberry cream into 2-3 pockets. Garnish with 3 strawberry slices.
  • Mocha: Stir cocoa powder and espresso powder into 1 bowl of the cream. Spoon the mocha cream into 2-3 pockets. Garnish with chocolate chips.
  • Churro: Stir cinnamon and brown sugar into 1 bowl of the cream. Spoon the cinnamon sugar cream  into 2-3 pockets. Lightly sprinkle cinnamon sugar over the filling.
  • Tropical: Fold mango and pineapple into 1 bowl of the cream. Spoon the tropical cream into 2-3 pockets. Sprinkle the filling with coconut and more pineapple or mango.
