- 2 pounds cucumbers any variety
- 1/2 small red onion
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon granulated sugar
- 1 tablespoon fresh dill plus more for garnish
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Wash and thinly slice the cucumbers. If preparing ahead of time, sprinkle with a little salt, let them sit in a colander for about 30 minutes, then pat dry with paper towels.
In a large bowl, combine sour cream, mayonnaise, vinegar, sugar, dill, salt, and pepper. Whisk until smooth and well blended.
Add the sliced cucumbers and onion to the dressing. Gently toss until everything is well coated.
Cover the salad and refrigerate for at least 30 minutes before serving.
