Cake Mix Cookie Bars
These Cake Mix Cookie Bars are our favorite easy dessert. With just one bowl and no fancy equipment, you can have these bars ready to serve for dessert in no time.

- 15.25 ounce yellow cake mix
- 1 large egg
- 1/2 cup milk
- 1/3 cup neutral oil canola, vegetable, or avocado oil
- 8 ounces milk chocolate or white chocolate chips or chopped chocolate bars divided
- 1/2 cup sprinkles divided
Preheat the oven to 350°F. Grease or line with parchment paper a 15x10x1-inch baking pan.
In a large bowl, mix together the cake mix, egg, milk, and oil until thick.
Stir in 1/3 cup of the sprinkles and half of the chocolate.
Spread the batter evenly into the prepared pan. Bake for 30-35 minutes until a toothpick inserted in the center comes out with a few moist crumbs. Cool completely in the pan.
Melt the remaining chocolate in a microwave safe bowl or in a double boiler. Drizzle over the bars, and immediately add the remaining sprinkles on top. Allow the bars to rest for 2 hours, or until the chocolate has set completely. Cut into bars and serve.
Expert Tips
- Choose another flavor of cake mix to change up the cookie bars. We use vanilla for our recipe, but you could also use chocolate, lemon, or red velvet cake mix!
- Add your favorite chocolate chips. We love milk chocolate or white chocolate, but semisweet, dark chocolate, peanut butter, and cinnamon are also delicious.
- Customize the sprinkles to the holiday. This is an easy way we love to theme these cookie bars to any occasion!
- To know when the cookie bars have finished baking, insert a toothpick into the center of the bars. If there's only dry crumbs, then the bars are ready to cool.
Storage
If you have any leftover cookie bars, store them in an airtight container at room temperature for up to 4 days. You can also freeze the bars for up to 2 months, then thaw at room temperatur
