Ingredients
 

  • 2 pounds fresh carrots
  • 1/4 cup salted butter melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Garnish options: fresh parsley, toasted walnuts, pine nuts or pecans, pomegranate arils, and/or chopped dried cranberries

Instructions

  • Preheat oven to 400°F. Line a sheet pan with aluminum foil or parchment paper.
  • Wash, peel, and cut the carrots into even sized sticks.
  • In a large mixing bowl, combine melted butter, brown sugar, ground cinnamon, salt, and black pepper. Mix until the sugar is well incorporated.
  • Add the sliced carrots to the bowl. Toss until they are evenly coated.
  • Transfer the coated carrots to the prepared sheet pan in a single layer.
  • Bake for 30-35 minutes or until the carrots are tender and caramelized, stirring halfway through.
  • Once baked, transfer the carrots to a serving dish.
  • Garnish as desired.
