Ingredients
1 ½lbbaby potatoescleaned and dried, halve or quarter if larger
2tbsp olive oil
2tbsp ranch seasoninghomemade or store-bought
Salt and Black Pepperif desired
Instructions
Preheat the oven to 425℉.
Pour the potatoes and ½ cup water in a microwave-safe bowl with a lid or cover with a paper towel. Microwave on high for 5 minutes.
Remove the potatoes from the microwave and drain an excess water. Pour the potatoes in a 3-quart baking dish or 13"x9". Toss with olive oil and ranch seasoning. If desired, add salt and pepper before or after baking.
Bake 30-35 minutes or until the potatoes are toasted and tender in the center.
