Amish Baked Oatmeal

Ingredients
 

Oatmeal

  • ½ cup oil
  • ½ cup sugar
  • 2 eggs lightly beaten
  • 1 cup milk
  • 3 cups old-fashioned rolled oats
  • ½ tablespoon baking powder
  • ½ teaspoon salt

Vanilla Cinnamon Cream

  • 2 cups milk
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon vanilla
  • 2 tablespoon sugar

Instructions

  • Preheat oven to 350ºF. 
  • In a medium bowl, whisk together oil, sugar, eggs, and milk. In a small bowl combine oats, baking powder, and salt. Fold dry ingredients into wet ingredients. If adding fruit fold in mixture. 
  • Pour in a non-stick 8”x8” pan. Bake 40 minutes. 
  • Meanwhile, for cream, in a small saucepan over low heat whisk together milk, spices, vanilla, and sugar. Dish up oatmeal in a small individual bowls and pour cream on top.
