Best French Dip Sandwiches (Slow Cooker, Instant Pot, or Oven)

This French Dip Sandwich recipe is a perfect easy weeknight dinner! Made easily in the slow cooker, Instant Pot, or oven the beef is so tender and flavorful. Topped with melty cheese it's a comfort food perfect for any time of year.

Ingredients
 

  • 2 ½-3 pounds beef chuck roast
  • 32 ounces beef broth
  • 12 ounces extra stout Guinness beer
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 ounce packet Lipton Onion Soup mix
  • ½-1 teaspoon salt amount as desired
  • ½-1 teaspoon black pepper amount as desired
  • 6 slices provolone cheese
  • 6 hoagie or sub rolls
  • 1 cup sliced onion optional
  • 1 cup sliced bell pepper optional
  • 1 cup sliced mushrooms optional
  • 1 sliced jalapeño optional
  • 1 tablespoon oil optional

Instructions

  • Heat oil in a large skillet on high heat. Season roast on both sides with salt and black pepper and sear 2-3 minutes per side. (Seasoning and searing first is optional.)
  • To a 6 quart or larger Crockpot, whisk together broth, beer, Worcestershire sauce, garlic powder, soup mix, and salt.
  • Place beef in the mixture.
  • Cover and cook on low for 6-8 hours or high 4-5. Once complete, remove the roast and shred. Discard excess fat.
  • If making a vegetable topping, heat oil in a medium pan on medium-high heat. Sauté prepared vegetables until tender, about 5-10 minutes. Season with a seasoning salt blend or salt and black pepper as desired.
  • Butter bread, and broil on high heat 15- 30 seconds. Add slices of cheese to the tops and broil again 15-30 seconds or until cheese is melted.
  • Assemble sandwiches with beef and vegetables, and serve with a side of au jus (the broth) for dipping.

Notes

    • Cheese Choices: French Dip sandwiches can be made with any melty cheese of choice. Besides provolone cheese, you could use American cheese, cheddar cheese, muenster cheese, Swiss cheese, or pepper jack cheese!
    • Sodium Adjustment: The sodium content can be adjusted to your preference. To lower the content, you can NOT salt the beef before searing nor add it to the Crockpot and choose low-sodium or unsalted broth. You can also make the Lipton Onion Soup Mix from scratch. 
    • Homemade Dry Onion Soup Mix: A homemade version of 1 Lipton Onion Soup Mix packet can be used instead of store-bought. Simply combine 2 ½ tablespoons dried minced onion, 4 cubes regular or reduced sodium beef bouillon, crumbled, 1 teaspoon onion powder, ⅛ teaspoon salt, ⅛ teaspoon ground black pepper.
    • Sautéed Vegetables: Sautéed vegetables, onions, bell peppers, and mushrooms, add extra flavor and texture to the sandwiches. Feel free to customize the vegetables based on your preferences. You can also add other vegetables like sliced jalapeños or caramelized onions.
    • Guinness Beer: The extra stout Guinness beer adds depth and richness to the au jus sauce. If you prefer not to use alcohol, you can substitute with an equal amount of beef broth or beef stock.
