Ingredients
½-1lbwhole carrotspeeled and cleaned
Pure olive oil spray
Salt/Black Pepper
2-3tablespoonhoney or hot honey
Instructions
Preheat oven to 425°F.
Spray a medium sheet pan with olive oil. Arrange the whole prepared carrots on the sheet pan in one layer. Spritz with olive oil and sprinkle with ½ teaspoon each salt and pepper.
Bake 25 minutes.
Remove from the oven and carefully slice each carrot most of the way through, leaving it intact. Sprinkle with ¼ teaspoon salt and hot honey. Flip the carrots over cut-side down on the sheet pan, return to the oven, and bake an additional 25-30 minutes or to desired caramelization.
