Copycat Dolly Parton’s Stampede Soup

Ingredients
 

  • 4 tablespoons butter
  • ¼ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½-3/4 teaspoon salt
  • ½-1 teaspoon ground white pepper
  • 14.5 ounce can chicken broth regular or low-sodium
  • 15 ounce can mixed vegetables drained
  • 2 cups half and half

Instructions

  • In a large saucepan, melt butter. Stir in flour, garlic powder, onion powder, white pepper and salt. Allow the mixture to simmer 1 minute.
  • Whisk in chicken broth and the drained vegetables. Bring the mixture to a simmer for 5 minutes.
  • Using a potato masher, emulsion blender or blender, mash the vegetables into the mixture to your desired consistency.
  • Whisk in half and half, and simmer an additional 5 minutes. Serve with Copycat Dolly Parton's Stampede Garlic Biscuits, cornbread, hoecakes or biscuits.

  • use a 15 ounce can drained mixed vegetables for convenience, but you can also use 15 ounces of fresh steamed vegetables or a can of Veg-All.
