Ingredients
Garlic Bread
2cupssourdough bread cubes
ΒΌ cupolive oil
Salt & Black Pepperto taste
2garlic clovesminced
2tbsp balsamic glaze or balsamic glaze with fig
Salad
1pint sweet cherry tomatoeshalved
8ozfresh mozzarelladice-sized cubed
β ozfresh basildivided
2tablespoonolive oil
Instructions
Garlic Bread
Add olive oil to a large skillet on medium-high heat. Once hot, add the bread, and stir to coat all the pieces well.
When the bread begins to brown, after 4-6 minutes, add garlic and stir well. Cook an additional 1-2 minutes. Turn off the heat, and allow the bread cubes to cool completely.
Salad
Reserve a few gathered basil leaves for garnish. Chiffonade (thinly slice) the remaining basil.
To a large bowl, add tomatoes, mozzarella, sliced basil, olive oil and β -1/4 teaspoon each salt and black pepper. Stir until combined well.
Fold the cooled garlic bread cubes into the salad and transfer to a serving bowl.
Garnish with the reserved basil leaves and balsamic glaze drizzle.
