Garlic Broccoli and Mushrooms

This simple vegetable side dish yields the perfect crisp-tender, flavorful bite!

Ingredients
 

  • 4 cups fresh broccoli florets
  • 4 oz sliced mushrooms
  • 3 garlic cloves thinly sliced
  • ¼ cup olive oil
  • ½-1 teaspoon salt
  • ½ teaspoon black pepper
  • ½-1 teaspoon crushed red pepper flakes optional

Instructions

  • Heat 3 tablespoon of the oil in a large skillet on medium-high heat. Add broccoli and mushrooms, toss to coat, and cook 3 minutes or until the broccoli is vibrant green. 
  • Add garlic, red pepper flakes, salt. pepper and remaining oil. Cook 1 minute. 
  • Add ½ cup water and bring to a simmer. Cover with a lid and cook 4 minutes. 
  • Uncover and cook until all the liquid has evaporated, about 1-2 minutes.
