Ingredients
1smallbaguetteabout 12-14 inches long and 2-3 inch diameter
1tablespoonolive oil or melted butter
6ounceswhite cheddar cheeseshredded
⅓cupcooked and crumbled bacon
6 teaspoonshoney or hot honey
Optional garnish: minced chives
Instructions
Preheat oven to 400ºF.
Slice bread in 20 ½-inch slices. To each bread slice, brush both sides with olive oil and sprinkle with salt and pepper. Bake at 5 minutes or until toasted well.
Top each bread slice evenly with cheese and bacon. Bake an additional 4-5 minutes.
Transfer the toasts to a serving tray and drizzle with honey or hot honey. If desired, garnish with chives.

Flavor Variations:
Fig Variation: Fig jam makes excellent Bacon Cheddar Bites as well. Omit the honey. After the toasts have baked, spread 1-2 teaspoons fig jam on the toasts before sprinkling with cheese and bacon. Continue with the recipe as written.
Bacon Options: You can use regular or turkey bacon for this recipe.
Cheese Varieties: Shredded gouda, smoked gouda, or fontina are excellent alternatives to sharp white cheddar. You can also use sliced brie cheese. Goat cheese and blue cheese are also options that you can use. They have a creamy texture with bold tangy flavors.
