Garlicky Ranch Roasted Potatoes

These 3 ingredient Ranch Roasted Potatoes are a favorite easy side dish recipe. They're prepped in less than 15 minutes with ranch seasoning and absolutely delicious!

Ingredients
 

  • 1-1 ¼ pound yellow baby potatoes
  • 2 ounces seasoned garlic butter melted
  • 1 tablespoon ranch seasoning mix

Instructions

  • Preheat oven to 425°.
  • Using a sharp knife, carefully score the inside of the potato surface in a criss-cross pattern. 
  • In a baking dish, pour in ⅔ of the melted butter and seasoning. Stir until combined well, then spread evenly over the bottom of the baking dish. 
  • Lay the potatoes scored side down onto the butter mixture.
  • Brush the tops of the potatoes with the remaining butter and sprinkle with salt and black pepper if desired.
  • Bake in a preheated 425°F oven for 35-40 minutes or until potatoes have browned and crisped on both sides.
  • If desired, add parmesan or cheddar cheese in the last 5 minutes of cooking. Optional, serve with bacon and/or sour cream or garlic aioli for dipping.

Pro Tips for Recipe Success

  • Uniform Slicing: Cut and score the potatoes into uniform sizes to ensure even cooking. 
  • Dry the Potatoes: After cleaning, make sure the potatoes are dried well as they'll crisp up better during baking. 
  • Potato Size and Roast Time: To achieve the perfect roasted exterior and soft interior, baby yellow potatoes will take 35-40 minutes. Quartered Yukon gold potatoes should take 40-45. Any larger than 1-inch then you'll need to increase the roasting time.
  • Kind of Potatoes: You can substitute yellow baby potatoes with your favorite potatoes. Cubed russet potatoes, red potatoes, and sweet potatoes all work great. Adjust the roasting time as needed. Leaving the potato skin on sweet potatoes is personal preference.
  • Garnish Options: Adding grated Parmesan cheese or cheddar cheese on top of the potatoes in the last 5 minutes of baking adds another level of deliciousness! Bacon bits, sour cream, and garlic aioli are also excellent additions!
  • Fresh Garnishes: After baking, garnish the potatoes with fresh chopped parsley, chives, or green onions.
  • Butter Substitution: Olive Oil or plain butter can be used in place of garlic butter.
